Cheesy Creamy Vegetable Tetrazzini | Tetrazzini Recipe
Chicken Tetrazzini is an American dish made with diced chicken, mushroom, onion & garlic in a buttery, creamy white sauce called tetrazzini sauce. It's served hot over Sphagetti pasta but any other pasta works well too. The first time I had this dish was at Mocambo Restaurant in Kolkata, India. Ever since, I wanted to make this dish at home.
This recipe is a Vegetarian version of the very famous Chicken Tetrazzini. We have used Sphagetti pasta in this recipe & then made a very buttery creamy white sauce using butter, olive oil, mushrooms, onion, garlic, lime juice, milk & cream. We have however used chicken stock to flavour the sauce. Vegetarians can use vegetable stock in place of chicken stock.
We then topped the creamy pasta with shredded mozarella cheese & baked it to PERFECTION! We garnished it with parsley to give a little bit of freshness & voila our utterly delicious Vegetable Tettrazini is ready. This dish melts in the mouth like butter & you have to try it to believe me.

1 lb mushrooms
1 diced onion
4 cups rotisserie chicken or cooked chicken breast
1/2 stick of butter
1 tbsp garlic
1 Tsp chicken bouillon
1/4 cup flour
1/2 cup white wine
1 cup chicken broth
4 cups half and half
1/4 cup creme fraiche or sour cream
2 cups cooked broccoli
1 cup grated parmesan cheese
2 cups shredded mozzarella
Diced parsley

This Skillet Turkey & Vegetable Tetrazzini recipe is a healthy twist on a beloved classic with loads of vegetables and turkey in an earthy mushroom cream sauce swirled with fresh pasta. Using leftover turkey or rotisserie chicken, this comfort food dish is a complete, satisfying meal in just 30 minutes.
HERE'S WHAT YOU'LL NEED:
2 tablespoons extra virgin olive oil
1 cup cauliflower
1 cup zucchini
1 small red bell pepper
3 tablespoons butter
1 small sweet yellow onion
2 cloves minced garlic
2 cups button mushrooms
2 tablespoons whole wheat flour or sweet rice flour for GF
1/2 teaspoon smoked paprika
2 teaspoons fresh thyme leaves or 1/2 tsp dried thyme
1 teaspoon sea salt
1/2 teaspoon fresh ground pepper
1/2 cup white wine
1 1/2 cups chicken stock
1 1/4 cups heavy cream
2 cups cooked turkey
1 tablespoon fresh parsley chopped
1/2 cup Parmesan cheese
8 ounces pasta

Vegan Chicken Tetrazzini Recipe | Chef Joya
This weeknight dinner is a big hug of love and it’s easy to make. Here’s exactly what I use and I promise if you do it like this, it will be the best you’ve ever had. Let me know what’s some of your favorite pasta dishes and share with someone who would love this and make a believer out of someone else.
1 lb of Linguine cooked in vegetable stock( do it rinse)
2 tbsp of olive oil
20 oz of vegan chicken
1 tbsp of my Golden Chick seasoning
2 tsp of vegan Worcestershire divided
8 oz of cleaned mushrooms
1 small onion diced
4 cloves of garlic minced
1/2 cup of vegan butter (use more then that sis ????)
3/4 cup of sherry wine
1/4 cup of tapioca starch
3 cups of unsweetened whole fat plant milk
2 tbsp of nutritional yeast
1 vegan ranch packet
A few dashes of Tabasco sauce
1 tbsp of vegan chicken bouillon or 1 cube
1 tsp of my Just Magic seasoning
Juice of half a lemon
1 -2tbsp of parsley
1 bottle of liquid mozzarella (if you can’t find it use another vegan cheese that melts easily but you will have to tent with foil)
Heat olive oil in a pan. Add vegan chicken, golden chick, and tsp of vegan Worcestershire. Sauté until brown and add onions, garlic, and mushrooms. Sauté for another 2 mins and remove from heat. Add sherry wine and scrape all the brown bits. Add vegan butter and allow to melt. Whisk in tapioca starch and then plant milk. Add nutritional yeast, dry vegan ranch packet, 1 tsp of vegan Worcestershire, vegan chicken bouillon Tabasco sauce, and just Magic. Once thickened, reduce heat and add lemon juice. Add back in the Chikn mixture along with drained linguine noodles. Fold in parsley and mix well. Heat oven to 500 and spray a large casserole dish with nonstick spray. Pour in pasta and top with liquid cheese. The cheese is bald head so add more of my Just Magic seasoning. Pop in the oven for 13-15 mins or until golden brown. Remove from heat and allow to cool for 10 mins.
