How To make Chicken and Black Bean Quesadillas
1 pound skinless boneless chicken breasts
cooked
1 cup green bell peppers :
sliced
1 cup red onion sliced
1 teaspoon chili powder
1 teaspoon olive oil
8 flour tortillas
2 cups black beans, cooked
1 1/2 cups shredded lowfat cheddar cheese :
or Jack
salsa optional nonfat sour cream :
optional cilantro -- optional
Heat oven to 375F. Cut chicken into 1/2-inch slices. In a nonstick skillet over medium heat, saute peppers, onions and chili powder in hot oil until vegetables are slightly softened, about 3 minutes. Remove from heat. Place 4 tortillas on a large baking sheet. Evenly spread beans over tortillas. Top with pepper mixture, chicken and cheese. Top each with remaining tortillas and press down lightly. Bake until heated through and cheese is melted, about 15 minutes. Cut each quesadilla into quarters and serve with salsa, sour cream and cilantro. Per 1/2 quesadilla 341 calories, 9.1 g fat (24%) 56 mg cholesterol, 450 mg sodium, 4.2 g dietary fiber
Variation ^ Substitute chili beans for black ones, and use 1/2 cup each of green and red bell peppers instead of all green.

BLACK BEAN QUESADILLAS | Easy Quesadilla Recipe
This Easy Black Bean Quesadilla recipe is definitely one of my favorites! Soft cooked vegetables on the inside and a crispy tortilla shell on the outside. Black Beans and corn are the star of the show. But you can definitely kick it up a notch by adding some sautéed bell peppers. Top it all off with your favorite toppings like sour cream, salsa and avocado!
Perfect for Meatless Mondays, Meal Prep and Vegetarian or Vegan meals.

How to make chicken and bean quesadillas
Who doesn’t love quesadillas? In addition to being a fan favourite, you can freeze leftover filling for an easy, ready-made meal in the future!

SOUTHWEST CHICKEN QUESADILLAS
Ingredients:
Mini Flour Tortillas
Black Beans
Chicken Tenders
Baby Spinach
Frozen Corn
Shredded Mozzarella Cheese
Pico De Gallo
Sriracha aioli
Seasonings Used:
Smoked Paprika
Black Pepper
Seasoned Salt
Garlic Powder
Onion Powder
Cayenne Pepper
Instructions:
1.Sauté seasoned chicken until done, then chop chicken into pieces
2.Add frozen corn and rinsed black beans, combine & cook for 5 mins uncovered
3.Add in spinach, cover with lid & cook until spinach softens
4.Once spinach is softened, add in mozzarella & cover with a lid. Allow to melt, stir & remove from heat
5.Melt butter on a griddle or skillet, butter both sides of tortillas, place filling on one side of tortilla & fold
6.Serve with pico de gallo, sriracha aioli & enjoy!
