How To make Chicken and Sweet Potatoes
2 c Mashed, cooked sweet potatoe
2 T Brown sugar
1/2 t Ground cinnamon
1/8 t Ground nutmeg
1/3 c Skimmed evaporated milk
1/4 c Chicken broth
1/4 c Minced onion
1 ea 8 oz. can water chestnuts*
1 ea 10 oz. cream of chicken soup
1 ea Or white sauce chicken flav
3 c Cubed chicken
3 T Water
*Drained, sliced. Preheat oven to 350F. In a medium size bowl, combine sweet potatoes, brown sugar, cinnamon, nutmeg and milk. Spread around the inside edge of a round 10 in. casserole, forming a ring. In a medium size non stick skillet, heat broth over low heat. Add onion and water chestnuts; cook until tender. Add soup or sauce, chicken and 3 tablespoons water; cook over medium heat until hot, stirring occasionally. Spoon chicken mixture into center of sweet potato ring in casserole. Bake uncovered, 30 min or until bubbling. Cal: 308; Fat: 6g.

INGREDIENTS
6 (1500 g) sweet potatoes
4 lbs (1816 g) ground turkey (93/7)
1 (200 g) sweet onion
4 (500 g) poblano peppers green peppers work fine
2 Tbsp (30 g) garlic minced
2 Tbsp (16 g) cumin
2 Tbsp (16 g) chili powder
2 Tbsp (30 ml) olive oil
10 Tbsp (40 g) green onions
1 cup (112 g) shredded cheese
2.5 cup (600 g) salsa
Salt and pepper to taste
INSTRUCTIONS
1. Wash and cut your sweet potatoes into a large dice.
2. Start a large pot of water over high heat and bring to a boil. Add in the sweet potatoes and boil until they are easily pierced by a fork. Drain the water once they have finished cooking.
3. Wash your peppers and cut the pepper and onion into a small dice.
4. Add 1 Tbsp of olive oil to a skillet over medium high heat and brown the turkey.
5. Add 1 Tbsp of olive oil to a skillet over medium high heatAdd the onion, peppers, and 2 Tbsp of minced garlic to the skillet. Cook until the peppers have softened.
6. Mix in 2 Tbsp chili powder, 2 Tbsp cumin and salt and pepper to taste.
Add in the sweet potatoes and mix.
7. Store the salsa in a smaller separate container.
PLATING
8. This recipe makes 10 servings. Divide the meat and potato mixture evenly into each of your containers. Top each dish with shredded cheese, 1 Tbsp of green onions, and ¼ cup salsa.

Ingredients
1 medium sweet potato, pierced all over with a fork
1/4 cup shredded skinless cooked chicken breast (rotisserie or leftover)
3 tablespoons shredded mild Cheddar
Kosher salt
1/2 small avocado
1 tablespoon salsa verde
1 scallion, sliced
Directions
Microwave the sweet potato on high until tender (when you squeeze it with a clean dish towel, it should feel really soft), about 5 minutes. Let sit for a few minutes.
Cut the potato in half but not all the way through. Using the dish towel to hold the potato in place, scoop out the flesh into a small bowl. Add the chicken, Cheddar and a pinch salt and mash everything together with a fork. Fill the potato skin with the mixture.
Cut the avocado into small pieces. Drizzle the stuffed potato with the salsa verde and top with the avocado and scallion.

Perfect Chicken Breast With Roasted Sweet Potatoes | Cooking Chicken Breast Was Never Easier
Do you want to know how to cook perfectly moist and tender chicken breast easily? I've found out that technique on google long time ago and cooking chicken breast without oven was never easier. I have never made my chicken breast different way. You need just sear chicken breast from both side, set heat on low and cook on low for 10 minutes + let it rest for another 10 minutes. You can use that technique for any chicken breast recipe.
I also love my chicken breast steak with sweet potatoes. For this recipe I have decided to dice sweet potatoes and bake them for 30 minutes. When they were done I have mixed them with crushed garlic and touch of salt. Baking sweet potatoes in this recipe was great because you could easily time it together with chicken breast which takes 20 minutes and have it ready in the same time.
How to cook perfect chicken breast with baked sweet potatoes?
Ingredients
Chicken breast
Sesame seeds
Sweet potatoes
Olive oil
Salt
Garlic
Instructions
Peel of the skin from sweet potatoes
Dice them
Bake at 200°C/390°F for 30 minutes
Pound/flatten chicken breast
Sear chicken quickly from both sides
Cook on low with lid on for 8-12 minutes (depends on thickness)
After 8-12 minutes remove it from stove and keep it in the pan covered for another 10 minutes (don't peak under lid!)
Mix sweet potatoes with salt and garlic
Enjoy delicious tender chicken breast with sweet potatoes :-)

INGREDIENTS
3 BONE IN SKIN ON CHICKEN THIGHS
2 chicken legs
1 tsp oregano
salt & pepper to taste ( i used about, slightly less than 1 tsp salt and 1/2 tsp pepper to season the chicken.)
1/2 Tbs olive oil to season the chicken
1 medium onion
4 huge cloves of garlic
a handful of freshly chopped parsley
1 cup of baby carrots
4 large gold potatoes
2 Tbs olive oil, to sear the chicken
1 Tbs butter
1/2 cup honey
1/3 cup sweet chili sauce
3 Tbs soy sauce
2 Tbs lemon juice
1 Tbs brown sugar
1 Tbs dijon mustard
