Directions:
Preheat oven to 400 degrees. Halve chicken breasts & pound flat.
Melt butter. Layer 4 sheets of phyllo, buttering each sheet. On each chicken breast sprinkle 1 tb shallots and 1/4 ts sage. Lay 1 oz. cheese on each breast & roll up. Place breast in the middle of the phyllo, at one end; roll once, fold in sides, brush with butter and continue rolling, buttering as you go. Lay all on ungreased cookie sheet and bake 25 minutes until browned.

Phyllo Chicken Pot Pie Recipe
Here is a relatively easy and simply delicious recipe that anyone can make. This is a take on the old classic Chicken Pot Pie but instead of encasing the whole thing in pie crust we top it with a flaky, crunchy phyllo dough instead. The flaky topping is a nice addition to this traditional dish and I think you will enjoy it.
1/2 Cup - Butter, divided
4 Tbsp - AP Flour
1 lb - Shredded Chicken
4 Cups - Chicken Stock/Broth
1 lb - Yellow Potatoes, diced
1 - Medium Yellow Onion, diced
1 Cup - Frozen Peas
2 - Celery Stalks, diced
2 - Carrots, diced
Salt
Pepper
Cayenne (optional, to taste)
1 Package - Phyllo Dough
Makes 3-4 servings (depending on bowl size)
Preheat Oven to 375F.
Chop vegetables and set aside.
In a saute pan or cast iron pan, melt 1/4c butter over medium heat. Once butter is melted, add flour and stir constantly for a few minutes to take create a light roux.
Add Chicken Broth to the roux and simmer on medium heat until sauce thickens a bit. Add the chopped vegetables to the sauce and simmer for 10-15 minutes or until vegetables are softened. Ladle soup into oven-safe bowls.
Microwave 1/4 cup of butter until melted. Place 3 sheets of Phyllo on counter and gently brush top layer with butter. Scrunch up the buttered phyllo and place on top of the bowl. Sprinkle salt on top of the dough. Repeat for other bowls.
Place bowls on a baking sheet (in case of overflow) and bake on the middle oven rack for about 20 minutes or until the tops are browned to your liking.
Let cool for a few minutes before serving because the bowls will be hot.

Super Easy Chicken Phyllo Pie | Oscars Kitchen
Super flaky, buttery sheets of crunchy phyllo sheets sandwiching a layer of flavored chicken mince and cheddar cheese. An easy appetizer that can be enjoyed by people of all ages. This Is our own twist to the classic phyllo goulash, an Egyptian dish.
Ingredients:
Chicken Mince - 500gms
Garam Masala - 1/2tsp
Pepper Powder - 1/2tsp
Cheddar Cheese(can use feta too)- 150gms
Green Chilies - 4 (finely chopped)
Ginger - 1/2inch (finely chopped)
Garlic Cloves - 5 (finely chopped)
Large Onion - 1 (finely chopped)
Egg Yolk - 1
Milk - 1tbsp
Melted Butter - 20gms
Phyllo Sheets (6-8)
A handful of chopped Parsley
Salt as Per Taste
Preheat oven to 400F
Steps for layering:
1. Layer 2 phyllo sheets on the bottom of the baking dish and brush the top of each sheet generously with the melted butter.
2. Then spread the chicken mince filling evenly on the phyllo sheet. Once done, repeat the first step again.
3. Then add the cheese and parsley mix evenly on the phyllo sheet.
4. Then layer around 2-3 phyllo sheets on top of the cheese and parsley mix. Once done, apply the milk and egg yolk mixture and bake for 20-30minutes until golden brown.
Tip: Cut squares on phyllo pie before baking.

How to Make Chicken and Gouda Phyllo Cigars
Low-fat, smoky gouda and baby spinach deliciously complement grilled chicken in a crispy phyllo cigar.
Prep Time: 15 Mins
Cook Time: 15 Mins
Total Time: 30 Mins
INGREDIENTS:
8-ounces chicken breasts, grilled, cooled and diced to ½-inch pieces
¼ cup red onion, minced
2 tablespoons honey
2 tablespoons red wine vinegar
12 sheets Athens® Fillo Dough (9″ x 14″), thawed
Cooking spray, as needed
1/2 cup light/low fat smoked Gouda cheese, shredded
2 cups baby spinach
DIRECTIONS:
In a small bowl, combine the red onion with the honey and red wine vinegar. Set aside for garnish.
Lay a sheet of fillo dough on a work surface. Spray lightly with cooking spray. Continue layering the fillo dough until layers are complete.
Spread half of the cheese along the bottom 2 inches of the long side of the fillo. Top the cheese with half of the chicken and then half of the spinach.
Roll the fillo up over the filling to form a roll. Continue to roll to the end of the fillo strip. Spray the outside of the cigar with cooking spray and place seam-side down on an ungreased baking sheet. Score the cigar in half. Repeat with the remaining fillo and filling to create two long cigars.
Bake cigars in a preheated oven at 350°F for 10-15 minutes or until lightly browned. Remove and let set for 5- 10 minutes.
For presentation: Cut each cigar into two, 7-inch cigars and reheat on the grill or an open Panini press. Using a colander or slotted spoon to drain the liquid draining the liquid, garnish with red onion. Serve immediately.
Tip: The smoked cheese replaces the need for bacon and the sweet and sour onions act as a healthy condiment. Grilling the chicken and the final cigar add texture, depth of flavor and eye appeal.
To serve as an appetizer, cut each 7-inch cigar into four, bite-size pieces.
Serve onions on the side to replicate ashes or stuff in one end of the cigar.
Yield: 4 cigars
