Chocolate Angel Food Cake | SuTasty

The cake ingredients:
1. Cake flour 55 grams;
2. Baking cocoa powder 20 grams;
3. Egg whites 200 grams;
4. Sugar 70 grams (35 grams sieved with the flour, and 35 grams added in the egg white in three batches when beating the egg whites);
5. 1 tsp vanilla extract (2 grams), this ingredient is optional;
6. 1/2 tsp cream of tartar (1.5 grams). if you don’t have cream of tartar, you can us ½ tsp white vinegar instead;
7. 1/8 tsp salt (0.8 grams);
8. Unsalted butter 25 grams.
Procedures:
Scale all ingredients accurately. Have all ingredients at room temperature;
Sieve the flour, cocoa powder and the 35 grams caster sugar;
Into the egg whites, add the salt and the cream of tartar, beat mixture at low-speed with a hand-mixer, add the 35 grams sugar in three batches, beat the egg foam until it forms moist and firm peak;
Into the egg foam, add the sieved flour mixer in a few batches, use the enveloping movement to sufficiently mix the dry ingredients with the egg foam; but no over mix;
Add the vanilla extract into the batter and mix well;
Microwave the butter for 17 seconds to melt it ( the microwave time may vary depending on your microwave brand and the microwave power level you use. Here we use 100% power level on our microwave oven); cool the better to 40-450C, add it to the batter and mix well. But no over-mix to minimize the formation of gluten.
Immediately deposit the batter into a 6”x21” baking pan (the bottom of the pan is aligned with parchment paper). Degas the surface with a small toothpick and shake it a couple of times to get rid of the inner bubbles.
Bake at 3000F for 45 minutes. No broiling.
This recipe yields a cake with a 6” (diameter) x1.2” (high) round cake with a weight of 316 grams. It is a low-fat and delicious cake, perfect for your coffee break. Enjoy it!
