How To make Chocolate Cherry Cake and Frosting
CAKE:
1 pk Devils food cake mix (with
-pudding in mix) 1/2 c Dairy sour cream
2 Eggs; beaten
1 ts Almond extract
21 oz Cherry pie filling
FROSTING:
6 oz Semi-sweet chocolate chips
4 tb Margarine or butter
2 1/2 c Powdered sugar; sifted
1/2 ts Almond extract
3 tb Milk (to 5 tb)
CAKE: Mix together cake mix, sour cream, eggs, almond extract and pie filling BY HAND. Pour into a greased and floured 9 x 13-inch pan. Bake in a 350 degree oven for 45-50 minutes, or until a toothpick inserted into the center of the cake comes out clean. Cool 5-10 minutes and top with frosting. FROSTING: Melt chocolate chips and margarine or butter together. Stir in powdered sugar, almond extract and milk to spreading consistency. Spread warm frosting on warm cake. This is the easiest chocolate cherry bundt cake ever because it starts with a cake mix and includes only 3 ingredients, but comes out tasting homemade and super moist.
I don’t think you’ll find an easier cake to make than this one. It comes together quickly and it turns out beautifully every single time. If you’re a fan of black forest cake, then this one is definitely for you.

This week I make a chocolate cherry cake with a chocolate mirror glaze finish. You can find the recipe below (I use the Silikomart silicone mold Essenziale 1000, which is 18cm diameter x 4cm height)
***Chocolate sponge cake (16cm pan)
2 eggs
70g sugar
48g cake four
12g cocoa powder
15g milk
15g unsalted butter
Bake the cake at 170C for about 30 minutes, let it cool down completely before cutting into 2 sheets. Moist the cake sheets with cherry syrup.
***Cherry compote
200g cherries
40g sugar
50ml water
25ml Kirsch (cherry liquor)
1/2 tbsp lemon juice
Puree half the amount of the cherry compote and cut the rest of the cherries into half
***Cherry mousse
puree half the amount of cherry compote and sift through to get about 70-80g cherry puree
2 gelatine leaves (3g)
semi whip 160g heavy cream with 20g sugar
***Chocolate mousse
microwave 80g dark chocolate with 60g heavy cream to melt the chocolate
fold with 150g semi whipped cream
***Chocolate mirror glaze
70g water
80g sugar
80g glucose syrup
80g condensed milk
80g dark couverture chocolate
3 gelatin leaves (5g)

The cherries baked into the cake make for an excellent surprise!
Chocolate Cake
4 ounces (115 grams) semi sweet chocolate, chopped
2 1/4 cups (270 grams) cake flour
3/4 cup (70 grams) unsweetened cocoa powder
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup (240 ml) lukewarm coffee
1 cup (240 ml) buttermilk
1 1/4 cups (280 grams) unsalted butter, room temperature
2 1/4 cups (450 grams) granulated white sugar
5 large eggs, room temperature
1 1/2 teaspoons pure vanilla extract
Cherry Filling and Topping:
About 3 cups fresh or frozen sweet dark cherries, pitted (If you are using fresh cherries you will need to add 1/4 cup water)
1/4 cup sugar
1 tablespoon cornstarch
Whipped Cream:
2 cups whipping cream
1/4 cup sugar
1 teaspoon vanilla extract
