Sour Cream Coffee Cake

Ingredients
12 tablespoons (1 1/2 sticks) unsalted butter at room temperature
1 1/2 cups granulated sugar
3 extra-large eggs at room temperature
1 1/2 teaspoons pure vanilla extract
1 1/4 cups sour cream
2 1/2 cups cake flour (not self-rising)
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon kosher salt
For the streusel:
1/4 cup light brown sugar, packed
1/2 cup all-purpose flour
1 1/2 teaspoons ground cinnamon
1/4 teaspoon kosher salt
3 tablespoons cold unsalted butter, cut into pieces
3/4 cup chopped walnuts, optional
For the glaze:
1/2 cup confectioners' sugar
2 tablespoons real maple syrup
Directions
Preheat the oven to 350 degrees F. Grease and flour a 10-inch tube pan.
Cream the butter and sugar in the bowl of an electric mixer fitted with the paddle attachment for 4 to 5 minutes, until light. Add the eggs 1 at a time, then add the vanilla and sour cream. In a separate bowl, sift together the flour, baking powder, baking soda, and salt. With the mixer on low, add the flour mixture to the batter until just combined. Finish stirring with a spatula to be sure the batter is completely mixed.
For the streusel, place the brown sugar, flour, cinnamon, salt, and butter in a bowl and pinch together with your fingers until it forms a crumble. Mix in the walnuts, if desired.
Spoon half the batter into the pan and spread it out with a knife. Sprinkle with 3/4 cup streusel. Spoon the rest of the batter in the pan, spread it out, and scatter the remaining streusel on top. Bake for 50 to 60 minutes, until a cake tester comes out clean.
Let cool on a wire rack for at least 30 minutes. Carefully transfer the cake, streusel side up, onto a serving plate. Whisk the confectioners' sugar and maple syrup together, adding a few drops of water if necessary, to make the glaze runny. Drizzle as much as you like over the cake with a fork or spoon.

This chocolate chip banana bread coffee cake is soft, gooey, and so delicious. It’s gluten free, dairy free, and refined sugar free!
Coffee Cake:
•2 cups oat flour
•3/4 cup coconut sugar
•1/2 cup almond flour
•1 tsp baking powder
•1 tsp baking soda
•1 tsp cinnamon
•1/2 tsp salt
•2 eggs
•1/3 cup oil (olive, avocado or coconut oil, melted)
•1 1/4 cups mashed banana
•3/4 cup dark chocolate chips (I use dairy free & refined sugar free)
Streusel:
•3/4 cup oat flour
•3/4 cup coconut sugar
•1/3 cup coconut oil, melted (or dairy free butter, melted)
•1 tsp cinnamon
•1/4 cup dark chocolate chocolate chips. (I use dairy free and refined sugar free)
Glaze:
•1 tbsp coconut butter
•1-3 tsp water
•1 -2 tsp pure maple syrup
Instructions:
1. Preheat the oven to 350°F and line an 8-inch round cake pan with parchment paper.
2. Prepare the coffee cake: whisk together the eggs in a large bowl then add in the remaining wet ingredients and mix. Next add in all of the dry ingredients and mix until smooth. Set aside.
3. While the batter rests, prepare the streusel: add all of the streusel ingredients (except for the chocolate chips) to a bowl and mix.
4. Add half of the coffee cake batter to the bottom of the lined pan and smooth it out. Top with half of the streusel and half of the chocolate chips. Repeat with the remaining batter, streusel, and chocolate chips.
5. Place in the oven and bake for 40-45 minutes, or until a toothpick inserted in the center comes out clean. Remove from the oven and let it cool.
6. While it cools, prepare the glaze: heat 1 tbsp coconut butter in the microwave or on the stovetop until warm/runny. Remove from the heat and stir in 1 tsp water and 1 tsp pure maple syrup. Mix until smooth, adding more water and maple syrup as needed
7. Once the coffee cake has cooled, remove from the pan and drizzle with the glaze then serve!
