How To make Chocolate Mint Brownie Cookies
3/4 c Mint chocolate chips; melted
1/2 c Margarine; softened
2 ts Vanilla
2 Egg whites; whipped
1 3/4 c Unbleached flour
3/4 c Mint chocolate chips
1/2 c Granulated sugar
1/2 c Brown sugar
1/2 ts Baking soda
1/4 ts Salt
Recipe by: Nestle Toll House Best Loved Cookies
Preheat oven at 350. Melt 3/4 cups chocolate chips, in a saucepan over lowest heat. When chips begin to melt, remove from heat; stir. Return to heat for a few seconds at a time, stirring until smooth. Cool to room temperature. In a mixing bowl, combine melted chocolate chips, margarine, vanilla, and egg whites. In another mixing bowl, combine flour, remaining chcocolate chips, sugars, baking soda, and salt . Mix wet ingredients with dry ingredients just until moistened. Drop dough by rounded tablespoons onto prepared baking sheets. Bake for 12 minutes or until edges are set but centers are still soft. -----

If you're looking for the chocolatiest chocolate treat around then look no further. These Salted Chocolate Brownie Cookies are IT! Rich, moist, fudgey, sweet and salty, they are the most indulgent cookies I know how to make.
Recipe -
120g rye flour
1 tsp baking powder
1/4tsp salt
395g dark chocolate (70% cocoa solids)
50g unsalted butter, chopped
4 lg free range eggs
270g light soft brown sugar
Maldon Sea Salt for sprinkling

Peppermint Brownie Cookies Recipe
Peppermint Brownie Cookies
These Peppermint Cookies are a brownie fudge delight of chocolate and peppermint bark that I know you will love! Happy Holidays!!
Ingredients:
Cookies
2/3 cup all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
1/2 cup butter (unsalted)
1/2 cup dark cocoa
1 egg (room temperature)
1 tablespoon espresso (or coffee)hot
1 teaspoon peppermint extract
Ganache
1/2 cup semi-sweet chocolate chips
1/3 cup cream
1/2 teaspoon peppermint extract
1/2 cup crushed peppermint candy
* Set oven at 350F. Mix the flour, salt, and baking powder in a large bowl then set aside.
* Mix the cocoa powder and the melted butter well, then add the hot espresso and the egg. Once it’s mixed add the brown and granulated sugar and mix until smooth.
* Add the wet mixture and into the flour until combined and then fold in the chocolate chips followed by the peppermint extract. Set in the refrigerator for 30 minutes.
* Using and small to medium size scoop (or spoons) portion out the cookie dough and place them two inches apart on a parchment-lined cookie sheet.
* Bake at 350F for about 8 minutes.
Ganache
Add chocolate chips and cream in a small bowl put in the microwave for 1 minute.
Mix well and add peppermint extract.
Once the cookies have cooled down you drizzle the ganache on the cookies and sprinkle the crushed peppermint and enjoy!
