2/3 c Sugar 1/4 c Packed fresh mint leaves or 1 1/2 tb Dried mint 1/2 c Unsalted butter 4 oz Semisweet chocolate coarsely Chopped 2 lg Eggs lightly beaten 1 t Vanilla 2/3 c Flour 1/4 ts Salt 1 c Mint chocolate chips Grease and flour an 8x8 inch pan and preheat the oven to 325. Combine the sugar and mint in the bowl of a food processor until the mint is pulverized Set aside. Melt the butter in a 2 quart saucepan over very low heat. Turn off the heat and add the chocolate. Set aside for 5 minutes to melt. Whisk the chocolate to smooth then stir in the mint sugar. Whisk in the eggs and vanilla. Mix together the flour and salt then stir into the chocolate mixture until evenly blended. Fold in the mint chocolate chips. Scrape the batter into the prepared pan and bake for 35 minutes. When done the surface will be soft. Cool overnight on a rack before slicing. Ingredients (Serves 8-10): 1 cup macadamia nuts ¼ cup fresh mint ¼ tsp sea salt ¼ tsp baking soda 3 ounces bittersweet chocolate (at least 80%), ½ cup coconut oil, 2 tablespoons erythritol 1 ½ tsp coconut flour 3 large omega eggs 1 teaspoon peppermint extract
Instructions: Preheat oven to 350. Grease an 8X8 inch baking dish with coconut oil, and set aside. In a food processor pulse macadamia nuts, mint, salt, and baking soda until the texture of gravel Pulse in chocolate and coconut oil until smooth (it will take a while) Pulse in peppermint extract, erythritol, coconut flour, eggs, and stevia Transfer mixture to the prepared baking dish, and bake for 20-30 minutes. Let cool completely before serving.
