How To make Chocolate Nut Pudding Cookies
3 1/3 c All-purpose flour
1 1/2 ts Baking soda
1 1/2 c Margarine
1/2 c Sugar
1 c Packed brown sugar
1 Chocolate pudding mix
3 Eggs
1 1/2 ts Vanilla extract
2 1/2 c Chocolate chips
1 1/2 c Nuts; chopped

* You can use either vanilla or chocolate pudding mix. Mix flour with baking soda. Combine margarine, sugars, pudding mix and vanilla in a large bowl. Beat until smooth and creamy; beat in eggs. Gradually add flour mixture, mixing well. Gently fold in chips and nuts. (Batter will be stiff.) Drop by teaspoonfuls onto ungreased baking sheets about 2 inches apart. Bake at 375 degrees for 8 to 10 minutes. -----

Mint Chocolate Pudding Cookies!
Ingredients: (Makes around 36 cookies!)
1 cup sugar
1/2 cup butter, softened
1 egg
1/2 cup sour cream
1 small box (3.4 oz.) instant vanilla pudding mix
1/2 tsp salt
1/2 tsp baking soda
2 cups all purpose flour
2 tsp mint extract
green food coloring
1 cup chocolate chips
1/2 cup Andes mints, chopped up
(If you don't want to use the Andes mints, just use 1 1/2 cups of chocolate chips!)
Directions:
1. Preheat the oven to 375 degrees and line a cookie sheet with parchment paper or spray with cooking spray.
2. Cream together the sugar and butter with an electric mixer.
3. Add the eggs, sour cream, and pudding mix and mix it until incorporated.
4. In another bowl, whisk together the flour, salt, and baking soda.
5. Add the dry ingredients into the wet ingredients a little at a time continuing to use the electric mixer until it gets too thick. You can finish mixing with a spatula.
6. Add the mint extract and green food coloring and continue mixing with the spatula until the desired color is reached. (This part can take some time and muscle!)
7. Fold in the chocolate chips and chopped up Andes mints.
8. Using a cookie scoop, drop by rounded tablespoonfuls onto the prepared cookie sheet.
9. Bake for 10 minutes.
10. Remove from the oven and let cool a couple minutes on the cookie sheet before transferring to a cooling rack to cool completely. Enjoy!!!

Chocolate Pudding And Walnuts Cookies
So, I found a recipe online that I've done before, so I tweaked it a *tiny* bit. Let's see if I learn it, or burn it! Original recipe in the link below, and recipe that I did below as well. See the differences!
Ingredients
1 cup butter softened
3/4 cup brown sugar
1/4 cup granulated white sugar
1 package of 4 serving Instant chocolate pudding mix
2 large eggs
1 teaspoon vanilla extract
2 1/4 cups all-purpose flour
1 teaspoon baking soda
10 ounces crushed walnuts
Instructions
Preheat oven to 375 degrees F.
In a large bowl, cream sugars and butter
Add the pudding mix, eggs and vanilla. Beat on medium speed until creamy and combined.
Mix flour and baking soda in separate bowl.
Gradually add in the flour and baking soda to the mixture until just combined.
Fold in the walnuts.
Drop batter by medium scoop on un-greased cookie sheets. Bake for only 8-10 minutes. (I did 9) (They may not seemed fully baked, but they are. Do not over bake!)
Remove from oven and let cookies rest and cool on the cookie sheets. No need to transfer to wire racks. (They keep cooking on the cookie sheets, this is important)
After 20 minutes on the cookie sheet, enjoy!
