How To make Chorizo a La Mexicana(Mexican Sausage)
1 lb Lean pork
2 tb Chili powder
1 t Oregano, handrubbed
1 t Salt
1 ea Garlic clove, pressed
2 tb Vinegar
Grind coarsely or chop pork. Add all other ingredients and mix thoroughly. Let stand for several hours. Fry without adding fat for about 30 minutes. If you aren't going to use immediately, pack the uncooked chorizo in a crock or glass jar and keep in refrigerator. Ingredients: 2 lbs of chorizo
2 lbs beef ribeye or your choice of meat (ex pork shoulder or ground beef the fatty the better)
4 guajillo Chile pods
1 chile ancho
4 Chile arbol
1 inch of cinnamon stick or 1/2 tsp ground
1/2 cup white vinegar
2 bay leaves
3 whole cloves or 1/2 tsp ground
2 tsp whole black pepper
1 1/2 tsp onion powder
1 1/2 tsp garlic powder
1 tsp mexican oregano
1 tsp smoked paprika
1/2 tsp whole cumin
1/2 tsp ground ginger
1 tbsp salt
