How To make Chorizo a La Mexicana(Mexican Sausage)
1 lb Lean pork
2 tb Chili powder
1 t Oregano, handrubbed
1 t Salt
1 ea Garlic clove, pressed
2 tb Vinegar
Grind coarsely or chop pork. Add all other ingredients and mix thoroughly. Let stand for several hours. Fry without adding fat for about 30 minutes. If you aren't going to use immediately, pack the uncooked chorizo in a crock or glass jar and keep in refrigerator. INGREDIENTS
MEAT: 1 lb ground pork, 5 oz pork fat
CHILES: 4 ancho, 2-3 pasilla
SPICES: 3 garlic cloves, ½ tsp ground cumin, ¼ tsp ground coriander seeds, ⅓ tsp ground black pepper, ⅓ tsp ground cinnamon, ⅛ tsp ground cloves, ¾ tsp ground oregano, ⅛ tsp ground ginger, 2 tbsp paprika, 1 tsp salt, ⅓ cup apple cider vinegar

Chorizo Recipe:
2 lbs ground pork
4TBS Chili Powder
2TBS Paprika
2TBS Oregano
1tsp Cumin
1tsp Salt
Pinch of Cinnamon
2 cloves of crushed Garlic
1/2 C. White Vinegar
Combine all ingredients, and viola! You’re done :) enjoy!

1.5 pounds ground pork (fatty is best, or use ground beef or other ground meats)
2 tablespoons paprika
1 tablespoon cayenne
1 tablespoon ancho powder
1 tablespoon guajillo powder
1 tablespoon garlic powder
1 teaspoon cumin
1 teaspoon oregano
1 teaspoon coriander
1/2 teaspoon Mexican cinnamon
1/2 teaspoon ground clove
2 tablespoons red wine vinegar
Salt and pepper to taste (1 teaspoon each)

How to Make Chorizo | Easy Mexican Chorizo Recipe
Here is a recipe for a delicious and leaner Mexican style chorizo. This recipe goes great in chorizo and egg breakfast tacos or even in queso dip.
INGREDIENTS
1 lbs ground pork meat (you can also use beef or turkey)
5 dried guajillo chiles
2 to 3 garlic cloves
2 bay leaves
1/2 tsp dried oregano
1/2 tsp ground cumin
2 tsp paprika
1 whole clove
2 allspice berries
1/4 tsp black pepper
1 tsp kosher salt (or salt of your choice)
1/4 cup apple cider vinegar (or white vinegar)
Freezes well for up to 6 weeks
