The Secret to a Classic Meatloaf Recipe

When you're in the mood for a homestyle meal that reminds you of your childhood, homemade meatloaf with a tangy sauce is a perfect fit. This veggie-packed meatloaf recipe will be a welcome addition to your weekly dinner repertoire. With that being said, there are quite a few veggies to cut and prepare. Finely chop 1/2 cup of fresh mushrooms and 1/3 cup of a small onion. Shred one medium peeled carrot until you have 1/2 cup of grated carrots. Mince two cloves of fresh garlic, and you're ready to dive into this simple meatloaf recipe. Preheat your oven to 350 degrees and line a rectangular baking dish with foil. Over medium-high heat, heat 1 tablespoon of vegetable oil in a large skillet and add the mushrooms, onions, carrots, and garlic to kick off this recipe for meatloaf. Cook the veggies until they're tender after four to five minutes and remove the skillet from the heat. Crack two eggs into a bowl and beat them lightly, adding to them 1 cup of soft bread crumbs, the cooked vegetables, 1/4 cup of milk, 3 tablespoons of ketchup, 1 tablespoon of Dijon style mustard, 1 tablespoon of Worcestershire sauce, and 1/2 teaspoon of kosher salt. Mix this all together, then add 1 pound of ground beef chuck and 1 pound of ground beef sirloin to bring your classic meatloaf recipe to life. Mix again until everything is just combined, taking care not to overwork the meat for a tender meatloaf. Transfer the meatloaf to the baking dish and work it into a rectangular loaf that's 9 inches long and 5 inches wide. Bake for 35 minutes, and while that's browning up, let's make the meatloaf glaze. To 1/2 cup of ketchup, add 1/4 cup of packed brown sugar and 2 teaspoons of Dijon style mustard. Stir until everything is combined to create a sweet glaze that's sure to stand out. After the meatloaf has cooked for 35 minutes, spoon the glaze over it and return to the oven for another 25 minutes. When this easy meatloaf has an internal temperature of 160 degrees, it's ready to be eaten. Serve up this classic meatloaf recipe for a scrumptious family dinner. If you happen to have any leftovers, this meatloaf will make a wonderful sandwich for lunch tomorrow!

INGREDIENTS
For the vegetable mixture:
- 1 medium onion
- 1 rib celery
- 8 oz cremini or white button mushrooms
- 2 carrots
- 4 cloves garlic
- 1/2 tsp kosher salt
- 1 tbsp minced thyme
- 2 tbsp tomato paste
For the meat:
- 2 large eggs
- 1 lb ground beef
- 1 lb ground pork
- 2 tbsp Worcestershire sauce
- 1 1/2 cups breadcrumbs
- 2 tsp Dijon mustard
- 1 tsp kosher salt
- 3/4 tsp black pepper
- 1 cup beef stock
For the glaze:
- 1/4 cup ketchup
- 2 tsp Dijon mustard
INSTRUCTIONS
- Preheat the oven to 350°F. Have a parchment-lined baking sheet prepared and set aside.
- Roughly chop the onions, carrots, and celery. Clean and quarter the mushrooms. Add the prepared vegetables and garlic to a large food processor, or work in two batches if too large for one batch. Fill the processor and pulse the vegetables until they are finely minced, 10-15 pulses. Without a food processor, the vegetables can be minced by hand.
- In a 4-quart saucepan, warm 2 tablespoons of butter over medium heat. Once the oil is warm, add the prepared vegetables and salt. Sauté the mixture until the vegetables are cooked down and begin to brown, 8-12 minutes. Add the minced thyme and tomato paste and stir into the vegetables. Cook the tomato paste until it darkens and starts to coat the bottom of the saucepan, 4-6 minutes. Once the tomato paste is cooked, remove the mixture from the heat to cool.
- In a large bowl, beat the eggs until smooth. Add the ground beef, ground pork, Worcestershire sauce, breadcrumbs, Dijon mustard, salt, black pepper, beef stock, and cooled vegetable mixture. Stir to combine, and ensure the mixture is well mixed with no pockets of unmixed meat or vegetables.
- Pat the mixture into a loaf shape on the prepared sheet pan, roughly 12 inches by 9 inches. Mix together the ketchup and Dijon mustard and brush the top of the meatloaf. Bake in the preheated 350°F until the center reaches 160°F, 45-60 minutes. Once baked, remove from the oven and cool for 15 minutes before slicing and serving.

Good Eats Meatloaf

Ingredients
6 ounces garlic-flavored croutons
1/2 teaspoon ground black pepper
1/2 teaspoon cayenne pepper
1 teaspoon chili powder
1 teaspoon dried thyme
1/2 onion, roughly chopped
1 carrot, peeled and broken
3 whole cloves garlic
1/2 red bell pepper
18 ounces ground chuck
18 ounces ground sirloin
1 1/2 teaspoon kosher salt
1 egg
For the glaze:
1/2 cup catsup
1 teaspoon ground cumin
Dash Worcestershire sauce
Dash hot pepper sauce
1 tablespoon honey
Directions
Heat oven to 325 degrees F.
In a food processor bowl, combine croutons, black pepper, cayenne pepper, chili powder, and thyme. Pulse until the mixture is of a fine texture. Place this mixture into a large bowl. Combine the onion, carrot, garlic, and red pepper in the food processor bowl. Pulse until the mixture is finely chopped, but not pureed. Combine the vegetable mixture, ground sirloin, and ground chuck with the bread crumb mixture. Season the meat mixture with the kosher salt. Add the egg and combine thoroughly, but avoid squeezing the meat.
Pack this mixture into a 10-inch loaf pan to mold the shape of the meatloaf. Onto a parchment paper-lined baking sheet, turn the meatloaf out of the pan onto the center of the tray. Insert a temperature probe at a 45 degree angle into the top of the meatloaf. Avoid touching the bottom of the tray with the probe. Set the probe for 155 degrees.
Combine the catsup, cumin, Worcestershire sauce, hot pepper sauce and honey. Brush the glaze onto the meatloaf after it has been cooking for about 10 minutes.
