How To make Coconut Almond Balls
4 c (8 1/2-oz) shredded coconut
-(fresh package!) 1/4 c Light corn syrup
1 pk (11 1/2-oz) milk chocolate
-pieces 1/4 c Vegetable shortening
26 Whole natural almonds (1-oz)
Tastes just like Almond Joy. Line two large cookie sheets with waxed paper. Set large wire cooling rack on paper; set aside. Place coconut in large bowl; set aside. Place corn syrup in a 1-cup glass measure. Microwave on high (100%) 1 minute or until syrup boils. Immediately pour over coconut. Work warm syrup into coconut using the back of a wooden spoon until coconut is thoroughly coated. This takes a little time, and yes, there is enough syrup. Using 1 level measuring tablespoon of coconut, shape into a ball by squeezing coconut firmly in palm of one hand, then rolling between both palms. (HINT: Measure out all of the coconut then roll into balls.) Place 2 inches apart on wire racks. Let dry 10 minutes. Reroll coconut balls so there are no loose ends of coconut sticking up. Place milk chocolate and shortening in a 4-cup glass measure or 1 1/2 quart microwave-safe bowl. Microwave on high 1 to 2 minutes or until mixture can be stirred smooth and is glossy; stirring once or twice. Working quickly, spoon 1 level measuring tablespoon of the chocolate over each coconut ball, making sure chocolate coats and letting excess chocolate drip down onto waxed paper. While chocolate coating is still soft, lightly press whole almond on top of each. Let stand to set or place in refrigerator. Store in a single layer in airtight container. Keeps best if refrigerated. In today's video, Coach Marisa will show you how to make nutritious COCONUT ALMOND BLISS BALLS. A delicious and healthy snack that you can take on the go.
INGREDIENTS
- 1 + ½ cup cups raw almonds
- ½ cup shredded coconut
- 1 cup medijool dates, packed (~15 dates) *pitted
- 1 tsp vanilla extract
- ¼ tsp salt
INSTRUCTIONS
Make sure pit is removed from dates. If dates are too dry, soak in warm water to soften for 10 minutes then pat dry with a paper towel. Add all ingredients to a food processor. Process until all ingredients become a find mixture, this will take a few minutes, continuously packing down ingredients as needed. Remove from food processor to a mixing bowl for easier handling. Use a cookie scoop to get evenly sized balls. Scoop mixture and use your hands to roll into ball shapes. Roll in extra coconut shreds or dip/drizzle melted chocolate if desired. Store in airtight container. Enjoy!

Coconut Almond Ladoo is an easy Indian sweet that can be made for any festival. Made with 3 main ingredients - almond flour, desiccated coconut, and sweetened condensed milk, these ladoo's are quick dessert that can be prepared in just 20 minutes.
INGREDIENTS
▢1 cup Desiccated Coconut dry shredded
▢1 cup Almond Flour
▢½ can Sweetened Condensed Milk (7 oz)
▢½ teaspoon Cardamom powder (Elaichi) optional
For Rolling:
▢2 tablespoon Desiccated Coconut for rolling
▢1 teaspoon Ghee for greasing hands

A friend of mine, Jude, gave me this recipe for Almond Balls. I've revised the recipe slightly by adding a macadamia nut and protein powder, with a dusting of desiccated coconut. Enjoy!

1/2 of a cup of coconut flakes
1/2 of a cup of sliced almonds
1/3 of a cup of sweetened condensed milk
Combine 1/2 of a cup of coconut flakes, 1/2 of a cup of sliced almonds, 1/3 of a cup of sweetened condensed milk together. Then put about a tablespoon of the mixture on your palm and use two hands to squeeze it into a ball. Do the same with the rest of the mixture. You can enjoy them directly or chill the balls in a refrigerator for about 10 minutes.
