3/4 c Cake flour
1 t Baking powder
1/4 ts Salt
1 tb Shortening
1/2 c Sugar
1 Egg
1 1/2 c Coconut
1/4 c Evaporated milk
1/2 ts Vanilla
1/2 c Tart jelly
Sift flour, measure, and sift three times with baking powder and salt. Cream shortening. Add sugar gradually and cream until light and fluffy. Add egg and beat until light. Add 1/2 cup coconut. Add dry ingredients alternately with milk. Beat after each addition until smooth. Add flavoring. Pour into well-oiled muffin tins. Bake in moderate oven (375 F) 20-25 minutes. Beat jelly with a fork until of
spreading consistency. When cakes are cool, spread top and sides with jelly. Roll in 1 cup coconut. 8 servings. The Household Searchlight

วิธีทำวุ้นมะพร้าวลูกกลม Coconut Jelly Balls
1. เอาน้ำมะพร้าวใส่หม้อตั้งไฟให้พออุ่น ผสมน้ำตาลกับผงวุ้นให้เข้ากัน ใส่ลงไปในน้ำมะพร้าวคนให้ผงวุ้นและน้ำตาลละลายตั้งต่อให้เดือด นำขึ้นจากเตาพักไว้ให้พอเย็น
2. เทใส่พิมพ์วงกลมและใส่เนื้อมะพร้าวลงไป ใส่ตู้เย็นช่องธรรมดาแช่ให้วุ้นแข็งตัวประมาณ1-2ชั่วโมง นำมาแกะใส่ถ้วยพร้อมเสิร์ฟ

2. Coconut meat 20 g.
3. Sugar 2 tbsp.
4. Agar powder 2 tsp.

Learn how to make a simple coconut jelly with agar-agar, coconut, longan and sugar in just 7 minutes. This dessert is your new hot afternoon fix when you need something cold and refreshing. (Ingredients & Utensils ↓)
This tropical fruit dessert is made from agar-agar, a naturally occurring jelling agent found in algae. Coconut milk and longan syrup is combined to balance the sweetness from the coconut and sugar, with the slight tanginess of the longan.
Longan fruit is incorporated to add a fruity texture to the coconut jelly and to enhance its sweetness.
This dessert can be made within 7 minutes - even shorter if you're using store bought coconut cream or coconut milk. Just add all the liquids, sugar and agar-agar powder together, stir it over the stove and pour it into a jelly mould.
I used a large baking tin as my mould and sprinkled the longan flesh over the jelly mixture, covering all the longan surfaces. After it has cooled, I could flip the fruit jelly cake and cut to my desired size.
This is best served chilled and can last in the fridge for 3 - 4 days (it will be devoured by then ;). Enjoy!
