How To make Craig Claiborne's No Salt Chili Con Carne
1 tb Oil,vegetable
3 Onions
1 Pepper
1 1/4 lb Beef,coarse grind
2 Cloves garlic
2 tb Red chile,hot,ground
1 tb Red chile,mild,ground
1 ts Cumin
1 ts Oregano,dried,pref. Mexican
1 Bay leaves
1/2 ts Pepper
4 c Tomatoes
1 tb Red wine vinegar
1/4 ts Chile caribe
1. Heat the oil in a deep skillet over medium heat. Add the onions and
green pepper and saute until the onions are translucent, about 3 minutes.~ 2. Sprinkle the meat with the garlic, ground chile, cumin, and oregano.
Stir to blend. Add the meat to the skillet. Break up any lumps with a fork, stirring occasionally until the meat is evenly browned.~ 3. Add the bay leaf, pepper, tomatoes, vinegar, and caribe. Bring to a boil, lower the heat and simmer 1 hour, stirring occasionally. Taste and adjust seasoning.~

This week I took to the kitchen to make a giant vat of my famous woodsman's chili! We love to do this a couple times a year. This time we are planning on freezing meal sized portions to enjoy over the next couple of months, but the next time we make this, we will be canning it for long term storage. This was done a week before Christmas and my wife had no intention of canning anything. So the freezer it is!
This chili is a mixology that I have developed over many years and every time I make it , it just gets more and more delicious. This batch was no exception! Add what you like, take away what you don't, make this your own to suit your personal preferences.

Craig Claiborne was a food columnist for the New York Times. He said Real Texas Chili is made with beef chuck and never beans. His recipe is my favorite for this spicy dish. As for the late Craig Claiborne, he was a food critic and author of more than 20 cookbooks. He often served as a judge at chili contests. The fact that he worked for the New York Times doesn't make him a New Yorker. He was born and raised in Mississippi.

2 1/2 pounds Chili meat (you could sub Ground Chuck )
1 large Chopped onion
1 Bell Pepper chopped
1 tablespoons Salt
1 teaspoon black pepper
1 teaspoon dried basil
3 Tablespoons Chili powder
2 Cloves Garlic Chopped
