How To make Creamy Brussels Sprouts and Noodles
1 pound fresh Brussels sprouts
quartered
2 medium onions :
finely chopped
4 tablespoons butter or margarine -- divided
1 cup sour cream
1 cup small-curd cottage cheese
1 clove garlic minced
1 teaspoon paprika
1/2 teaspoon salt
1/4 teaspoon caraway seeds
3 cups medium egg noodles :
cooked and drained
1 cup soft bread crumbs
Place the Brussels sprouts and a small amount of water in a saucepan; cover and cook until tender. Meanwhile, in a skillet, saute onions in 2 tablespoons butter until golden brown. Remove from the heat; stir in the sour cream, cottage cheese, garlic, paprika, salt, and caraway seeds. Drain sprouts; add to onion mixture with noodles. Spread into a greased shallow 2-quart baking dish. Melt remaining butter and toss with bread crumbs. Sprinkle over casserole. Bake, uncovered, at 375 degrees, for 20 to 25 minutes or until golden brown.

1 bag of pasta/spaghetti
Grated cheese (choose your favorite)

Sweet + Sticky Brussels Sprouts Noodles #shorts | SO VEGAN
Don’t let those leftover Brussels sprouts go to waste! Instead put them to good use in this DELICIOUS noodles recipe - which is sweet, tangy and sticky all in one.

Serves 2
???? 300g (10.6oz) extra-firm tofu, cubed
???? 2 tbsp cornflour
???? vegetable oil
???? 200g (7oz) Brussels sprouts, sliced
???? 1 thumb of fresh ginger, peeled + grated
???? 1 tbsp caster sugar
???? 1.5 tbsp tomato puree
???? 1 tbsp apple cider vinegar
???? 3 tbsp soy sauce
???? 300g (10.6oz) straight-to-wok udon noodles
???? 1 red or green chilli, sliced (optional)
Combine the tofu and cornflour in a mixing bowl until the tofu is completely coated.
Add 1 tablespoon of vegetable oil to a wok on a high heat. When the oil is hot, add the tofu and fry for 10 minutes or until crispy all over, then transfer back to the mixing bowl.
Wipe the wok clean, return the wok to a high heat and add another tablespoon of vegetable oil. Next add the sliced Brussels sprouts and fry for 2-3 minutes or until they begin to brown.
In a small bowl, combine the ginger, sugar, tomato puree, apple cider vinegar and soy sauce, then leave to one side.
Lower the heat, then add the noodles, crispy tofu, sliced chilli and the sauce. Stir to combine and add a splash of water to loosen the sauce, if necessary.
Heat through for 30 seconds or so until the sauce becomes sticky, then remove from the heat and serve.

▢1 pound brussels sprouts
▢1 tablespoon olive oil
▢1/2 teaspoon white pepper
▢1 tablespoon white miso
▢1 tablespoon maple syrup
▢1 tablespoon rice vinegar
FOR THE NOODLES
▢3 blocks ramen
▢1 tablespoon sesame oil plus more for serving
▢4 cloves garlic miced
▢1 tablespoon fresh ginger minced
▢1 small yellow onion sliced
▢12 ounces vegan beef crumbles or sub cooked lentils
▢1/4 cup hoisin sauce
▢2 tablespoons low sodium soy sauce
▢2 tablespoons rice vinegar
