Crispy Fried Chicken Tenders Recipe

To a bowl, add buttermilk or if you don’t have buttermilk, here is my substitute. Whole milk and vinegar. Leave this alone for 15 minutes. Here are the cleaned chicken tenderloins. You can buy them just like this or cut chicken breast into strips. After 15 minutes, looks a little curdled like buttermilk. Add hot sauce and mix. Add the chicken and mix well. Leave this aside for 2 hours. Heat up a pan with vegetable oil. For the crust, to a bowl, add all purpose flour. Large eggs in another bowl and panko bread crumbs in another dish. To the flour, add salt, garlic powder, smoked paprika (you can use regular) and cayenne powder. Add salt to the eggs. Add salt to the bread crumbs. Mix everything up. First we dip the chicken in flour, then eggs, then breadcrumbs. Have a plate to the put the coated chicken on and a plate or pan lined with paper towels for the fried chicken. You can also drain the chicken on a rack over a sheet tray.
Let the excess buttermilk drip off the chicken. Put it in the flour and coat well. The eggs next, let the excess drip off and put the chicken on the bread crumbs. Use your other hand to press the bread crumbs on the chicken. Set the coated chicken on a plate. Test your oil temperature with a ball of the mixture stuck to your hands or a thermometer, it should be 350 degrees Fahrenheit or 180 degrees celsius. Gently drop the chicken in the oil and cook for about 5 minutes or until golden brown. The pieces of chicken are not thick and cook very quickly. Drain and serve hot. If you like things a bit on the saltier side, sprinkle a little coarse salt on the tenders right after you take them out of the oil. These tenders are great served with ketchup, honey mustard or sriracha mayo. The outside is crunchy and the inside is soft and juicy. Chicken Tender Brine (enough for 1 1/2 - 2 pounds of chicken):
2 cups buttermilk
1 cup pickle juice
1 cups Frank’s red hot
1 tbsp smoked paprika
Breading Situation:
1/3 cup all-purpose flour with 1 tbsp onion powder
2 eggs whisked
2 cups panko bread crumbs
Homemade ranch:
1 cup mayonnaise
1/2 cup sour cream
3/4 cup buttermilk
3 tsp onion powder
1 tsp garlic powder
1 tsp sugar
1/2 tsp msg
1/2 tsp salt
2 tsp white vinegar
1/4 cup chopped parsley
1/4 cup chopped dill
1/4 cup chopped chives

2-3 tbsps hot sauce
oil for frying
Sauce:
2tbsps hot sauce
1/2 cup honey
1/4 cup sriracha
1/4 cup brown sugar
3-4 tbsps low sodium soy sauce

Ingredients for KFC Style Chicken Strips Recipe:
For marination:
- Boneless chicken strips - 2 large chicken fillets (250 gms) cut into strips
- Buttermilk- 2 cups
- Hot sauce- 2 tsp
- Salt- 1/4 tsp
- All purpose flour/Maida- 2 cups
- Salt- 2.5 tsp
- White Pepper- 3/4 tsp
- Chilli powder-1 tsp
- Garlic powder-1/4 tsp
- Baking powder- 1/4 tsp
- Eggs- 2 big
- Salt- a pinch (1/8 tsp)
- Refined oil- for deep frying
Preparation:
- Wash and pat dry the chicken fillets. Cut them into strips and set aside.
- To marinate the chicken strips, pour 2 cups of buttermilk in a bowl.
- Add 2 tsp of Hot sauce & 1/4 tsp of salt. Mix well.
- Add the chicken strips, mix well and set aside for an hour.
- Take 2 baking dish or square glass containers preferably one big and one small.
- Break 2 eggs into the smaller container and add a pinch (1/8 tsp) of salt. Whisk it well.
- In the bigger square container or baking dish, add 2 cups of flour/maida and add salt, white pepper, Chilli powder, garlic powder and baking powder. Mix it thoroughly with a small spatula or spoon.
- Now to do the breading, take out one strip at a time from the marinade and place it on the baking dish. Coat it evenly with the flour and take it out and place in the whisked egg. Coat it in the whisked egg and take it out and place it on the baking dish again to coat it well with the flour, to form layers of flour on the chicken strips.
- Repeat the same for all the strips and keep the breaded chicken strips on a plate.
Process:
- Take a flat skillet/deep pan and pour oil sufficient to deep fry the tenders. Heat the oil to medium hot.
- To bread the tenders take out the tenders one at a time and place on the egg wash. Coat it well and then place on the panko breadcrumbs. Bread it to evenly coat the tenders with Panko breadcrumbs. Arrange on a plate.
- Repeat the steps with the other tenders.
- Once the oil is medium hot, drop the tenders one at a time so as to not crowd the pan, say 4/5 in one batch.
- After around 2-3 mins once the tenders start floating on top, turn them over. Continue to fry them for 3 more minutes turning them few times till the tenders are golden brown color on all sides.
- Remove from oil and put the next batch. Repeat the process.
- Fry in batches of 4-5 strips each time.
