Pear and Manchego salad
Pear & Manchego salad - Prep:15 mins Cook:5 mins Easy Serves 2 -- Ingredients
1 tbsp good-quality clear honey 2 rosemary sprigs 2 tsp olive oil, plus a drizzle for toasting the
nuts 2 tbsp blanched hazelnuts zest ¼ lemon 1 tsp balsamic vinegar 75g mixed leaves (we used red chicory, watercress
and rocket) 1 ripe pear, halved, cored and thinly sliced 25g Manchego (or a vegetarian hard cheese)
Method
1.Heat the honey and rosemary in a small pan with 1
tbsp boiling water. Bring to a simmer and let it
bubble for around 30 secs. Remove from the heat and
allow to infuse.
2.Heat a frying pan and drizzle in a little oil. Add
the hazelnuts and toast until golden and starting to
char a little here and there. Remove from the pan,
allow to cool, then chop roughly to make a rustic
crumb. Mix with the lemon zest and some seasoning.
3.To make a dressing, combine the olive oil and
balsamic vinegar with some seasoning. Toss the salad
leaves in most of the dressing, then arrange on
serving plates or a platter, layering the leaves
with the pear slices. Top with shavings of Manchego
and the hazelnut crumb, then drizzle over some of
the rosemary honey and the remaining dressing. Serve
with Prosciutto twists (see tip, below) for the
meat-eaters.

This is a very sophisticated looking salad using endives, it is a crispy and super delicious salad that is going to shock your guest. Ing: 3 to 4 endives cleaned and taken apart 3/4th cup matchstick carrots 1 bunch of spring onions chopped 1 small mango cubed half red bell pepper cubed in very small pieces 1/2 cup coleslaw or sliced cabbage 1/2 cup jicama cubed in very small pieces 1/2 english cucumber sliced 1/2 cup blueberries roasted pumpkin seeds for garnishing black and white sesame seeds for garnishing Salad Dressing: 1/2 cup oil 1tbsp soy sauce 1/4 cup apple cider vinegar 1/3 cup sugar Method: Start by preparing the endives by washing them and taking the leaves out one by one and keep it aside, next take a big bowl and add all the fruits and vegetables you have chosen next mix the salad dressing in a separate cup. Make sure you have mixed all your salad ingredients well, add the sesame seeds, followed by the dressing and mix well, you might now need to add all the dressing, just keep the extra and use it for the oriental salad. Lastly take the endives and fill it with the salad mixture, garnish with pumpkin seeds and serve immediately. Enjoy!
