Curried Corn Soup (Thai inspired creamy coconut curry soup)
This curried corn soup recipe will satisfy anyone's craving. It is a Thai inspired creamy coconut curry soup flavored with lemongrass, green chilis, curry spices and lemon. It is so delicious, creamy and easy to make.
It is sweet corn season and I have been eating corn on the cob fresh from the garden nearly every day for the last few weeks. The abundance inspired me to make this delicious corn soup recipe using already boiled sweet corn. I was in the mood for some Thai flavors, so aromatics like lemongrass, ginger and garlic was married with coriander, cumin and coconut milk to make this amazing curried soup. If you have fresh corn from the garden, or even if you only have frozen corn or canned corn, you can make this easy soup in no time.
Ingredients:
2 cups of boiled corn, cut from the cob - can use frozen or canned if necessary.
1/2 red onion, chopped
1 green chili, seeded - more if you like it spicier
Two stalks of lemongrass, tender end, chopped finely
1 large or 2 regular cloves of garlic, chopped
1 inch ginger, chopped
1 medium potato, diced small
Juice of 1 lemon
1 tbsp coriander powder
1 tbsp cumin powder
1/4 tsp turmeric
1 12 oz can of coconut milk
1 tbsp sugar
salt to taste
Heat 1 tbsp of oil in a pot over a medium flame. Add the onions, green chili, lemongrass, garlic and ginger. Saute for a few minutes to soften the onions. Add a pinch of salt. Once softened, add in your dried spices. Mix and cook for about a minute until the spices release their aromas. Add in the diced potato. Add 3 cups tomato water (or vegetable broth). Add the corn. Simmer for 10 minutes until the potatoes are just tender. Add one 12 oz can of coconut milk. Mix well and simmer for another 5-10 minutes. Taste for seasoning. Turn off heat. Add juice of 1 lemon. If needed, add the sugar to balance the acidity of the soup. Puree the soup in a blender or using a stick blender until smooth and creamy. Add the soup back to the pot and reheat it to the desired temperature. Adjust the final seasoning. Plate and enjoy. Garnish with fresh cilantro.

Corn Curry
Corn curry is a really quick recipe and taste really good. The main taste in this recipe is of coriander and coconut, it is a spicy curry and taste best when served with rotis or parathas and rice.
Preparation Time: 15 minutes
Cooking Time: 10 minutes
Makes 4 servings
Ingredients
1 1/2 cups boiled sweet corn kernels (makai ke dane) , lightly crushed
2 tbsp oil
2 sticks cinnamon (dalchini)
2 cloves (laung / lavang)
2 cardamoms
1 tsp cornflour dissolved in
2 cups of coconut milk
salt to taste
To Be Ground Into A Green Paste (using Little Water)
1 1/2 cups roughly chopped coriander (dhania)
1/4 cup thinly sliced onions
2 tbsp freshly grated coconut
7 garlic (lehsun) cloves
25 ginger (adrak)
4 tsp poppy seeds (khus-khus)
6 green chillies , roughly chopped
1 tsp lemon juice
For Serving
roti /paratha
steamed rice (chawal)
Method
1. Heat the oil in a kadhai, add the prepared green paste, cinnamon, cloves
and cardamom and sauté on a medium flame for 2 to 3 minutes.
2. Add the corn, mix well and cook on a medium flame for 1 minute, while
stirring continuously.
3. Add the cornflour-coconut milk mixture and salt, mix well and cook on a
medium flame for 5 to 6 minutes, while stirring continuously.
4. Serve hot with roti/paratha and steamed rice.

SWEET CORN SOUP
Preparation time : 10 minutes
Cooking time : 25-30 minutes
Servings : 2
Ingredients
1 ltr Water (पानी)
1 cup Sweet Corn - crushed (भुट्टे के दाने)
2-3 fresh Green Chillies - chopped (हरी मिर्च)
1 medium Carrot - small diced (गाजर)
Salt to taste (नमक स्वादानुसार)
1 inch Ginger - chopped (अदरक)
¾ Sweet Corn Kernels (भुट्टे के दाने)
10-12 French Beans - chopped (फ्रेंच बींस)
⅓ cup Corn-Starch / Arrowroot Slurry (कॉर्न स्टार्च या आरारूट का लिजाम)
½ tsp White Pepper Powder (सफेद मिर्च का पाउडर)
½ tsp Vinegar (सिरका)
For Egg Drop Sweet Corn Soup
1 Egg (अंडा)
1 tsp Water (पानी)
For Garnish
2 tbsp Spring Onion - chopped (प्याज़ पत्ता)
½ tsp Chilli Oil (optional) (चिली ऑयल)
Process
In a big pot add water, crushed sweet corn kernels, green chillies and bring it to a boil.
Now turn the heat to medium and let it simmer for 4-5 minutes and keep on skimming on the top.
Then add carrot, salt, sweet corn kernels and keep on simmering for 4-5 minutes or until it starts to thicken.
After 5 minutes add french beans and continue simmering.
Now pour half of the soup in another pot and keep it aside on low heat for egg drop sweet corn soup.
Then in the veg sweet corn soup add vinegar, half of the mixture of corn-starch slurry and white pepper powder and cook until thickened.
Now for Egg Drop Sweet Corn Soup mix egg and water in a bowl, then start pouring it from a height into the soup kept aside while stirring continuously.
Then add vinegar and the remaining half of the corn-starch slurry and white pepper powder, keep on cooking until thickened.
Now switch off the flames and serve both the soups hot in a serving bowl and garnish with spring onion and chilli oil.
