3 c Whole wheat flour
1 ts Salt
1 tb Sugar
1 cn Canned pumpkin
1 tb Pumpkin pie spice
1 c Canned evaporated milk,
Warmed 1 Egg

What Is Monkey Bread? | Bread Machine Recipe 2018 | Amazing Vegan Monkey Bread
You might be asking yourself, “What is monkey bread?” It is a type of bread that is made by baking many small balls of yeast dough in a pan with a sweet sauce. And in today's Chore With Me video I’m going to show you how to make vegan monkey bread.
Bread Maker Monkey Bread Recipe
Dough
1 cup coconut milk
1 tsp pure vanilla extract
¼ cup water
¼ cup white organic cane sugar
2 TBSP oil
2 tsp salt
2 ¼ cups of white flour
1 cup spelt flour
2 tsp yeast
Sugar Coating
1 cup white organic cane sugar
1 TBSP cinnamon
½ cup coconut milk
Glaze
½ cup confectioners sugar/icing sugar
1 TBSP milk
For this recipe I’m going to be using my Zojirushi bread maker. I’ve made monkey bread dough by hand before, but using the bread maker is so much quicker.
The monkey bread we are making today is vegan so we are going to start with one cup of milk. I’m using coconut milk, but you can use whatever kind you like. And to that I added one teaspoon of pure vanilla extract. When using the bread maker for this particular recipe you do not need to heat the milk so you can just put it in straight from the fridge.
Then we will be adding in a ¼ cup of water, ¼ cup of white cane sugar and 2 tablespoons of oil. I prefer using grapeseed oil because it has a very mild flavor. To that I’ll be adding two teaspoons of salt. I’m using Himalayan sea salt and you’ll notice it has a slightly pink tint. That’s because it’s less processed than regular white salt and contains trace minerals such as potassium, magnesium and calcium.
Next I added 2 ¼ cups of white flour and 1 cup of spelt flour. If you prefer to use all white flour you can or you can use some wheat flour in place of the spelt flour. And finally I will be adding 2 teaspoons of yeast to our flour mixture.
Then it’s time to close the lid and pick out setting. I will be using the dough setting and using the quick option. It will take just under an hour for the dough to be kneaded and have its first rising.
I think the prettiest presentation for monkey bread is to use a bundt pan. I’m going to go ahead and grease the pan really well using coconut oil, but you can use butter or margarine if you like. It’s ok to be extra generous because we want to make sure the monkey bread will come out of the pan.
Then I’m going to take 1 cup of white organic cane sugar and add 1 tablespoon of cinnamon and in a separate bowl add ½ cup of milk. It’s been about 45 mins and our dough has mixed and proofed, we have our cinnamon sugar mixture ready and our bowl of milk. We are going to grab a small piece of dough, roll it into a ball and then we are going to drop it into the milk. You want to make sure that your dough balls are not too big because they will rise a fair bit in size. Once we’ve given the dough balls a milk bath we will coat them in the sugar and cinnamon mixture. I’m going to get them all covered in cinnamon and sugar which will be super delicious once they bake.
Once they are all coated we will drop them into our prepared pan. Then we will continue to repeat that process until you’ve used up all your dough.
Once you are finished forming all the dough you will place the pan in a preheated oven for 30-40 minutes until it has doubled in size. You will then bake the monkey bread at 350F for 20-25 minutes until lightly golden brown on top. And this is what your monkey bread should look like when it comes out of the oven. It’s almost done, but you need to add one more thing to make it perfect. Mix half a cup of icing sugar together with 1 tablespoon of milk and drizzle it over your monkey bread once you have flipped the monkey bread onto a platter to cool. This is one of the best desserts over invented! Let me know how you like it!
