2 Bananas and 1cup of oats. Only 3-ingredient snack ready in 3 minutes
Today, I will be sharing with you how to make banana cookies. It's one of my children's favorite snacks. The recipe for these cookies is very simple, without using baking powder, baking soda, sugar, oil & flour, The COOKIES are very healthy and delicious!
1cup=250ml 1/4cup=60ml
Two ripe bananas
The weight of the peeled banana is about 170 grams
Put the bananas in a large bowl and mash them with a fork
Add in 1 cup of quick oats
1/4 cup dried cranberries, chopped
Add dried and chopped cranberries
Mix well
Prepare a large baking pan and line it with parchment paper or a silicone baking mat
Dig a tbsp and put it on the baking tray
This recipe can make 12 small biscuits
Use the back of a spoon to gently press to form a small round shape with a diameter of about 6 cm
Put it in the preheated oven and bake at 175 degrees Celsius or 350 degrees Fahrenheit for 15 minutes
The taste of this biscuit is slightly chewy on the outside and very soft on the inside
This is a very healthy and simple recipe
My kids absolutely love this cookie!

Protein: 13.32 g
Carbohydrate: 34.13 g
Fiber: 9 g
Fats: 29.72 g
Calories: 430
▶️ RECIPE INGREDIENTS: (12 bars)
150g Almond - 1 cup
100g Walnuts - 1 cup
130g Pumpkin seeds - 1 cup
50g Goji Berry - 1/2 cup
350g Pitted SOFT Dates (Jelly Like) - 2 heaping cups
1 Cup Smooth Almond Butter (265g) OR Nut Butter of Choice (preferably unsalted)
1/4 Teaspoon Salt (I have added pink Himalayan salt)
1/2 Tablespoon Ground Cinnamon OR to taste
Square Pan: 9 X 9 X 2 Inch (23 X 23 X 5 cm)
▶️ METHOD:
Start by toasting the almonds for about 2 minutes on medium heat, then add the walnut and pumpkin seeds to it and toast for another 2 minutes. Once toasted immediately remove from heat and transfer it to a heat proof plate and allow to to completely cool down. this will prevent the nuts from burning.
Now add the dates and almond butter to a food processor and blend it well and then add the toasted nuts, goji berry, ground cinnamon and salt. Blend it to a coarse mixture.
▶️ PROTEIN/ENERGY BARS:
Prepare a pan by brushing the bottom and side walls with oil and line it with parchment paper. Transfer the mixture into the pan and press it with a spoon to pack it firmly. Take your time as it is REALLY important to press it firm, especially the corners - this will prevent any air gaps and prevent the bars from crumbling while cutting. Smooth out the surface.
Now cover it with plastic wrap and let it chill and set in the refrigerator for 2 to 3 hours.
Once it has set remove from the pan and cut it into desired shape with a sharp knife. Make sure to clean the knife with paper towel in between cuts this will keep the cuts clean.
After cutting it wrap it individually in plastic wrap or parchment paper and store it in the refrigerator. This stores well in the fridge for 3 to 4 weeks.
▶️ PROTEIN/ENERGY BALLS:
Take two tablespoons of the mixture and press it between palms of your hand until firm and formed into a ball. Then smooth out the surface. You can store it as is in an air tight container or wrap it individually in a plastic wrap or parchment paper.
▶️ IMPORTANT TIPS:
???? As soon as the nuts/seeds/dates are toasted remove it from the heat and transfer it to a plate to cool down. This will prevent it from burning. DO NOT leave it in the hot pan.
???? Use SOFT dates only
???? If the mixture gets too dry and difficult to bind add some more almond butter
???? sometimes nuts/seeds/dates are dryer than usual and may need more binding. The fix is to increase the amount of almond butter so that it sticks together. Just empty the mixture into a bowl, add some almond butter mix it thoroughly until it starts sticking together and then transfer it back to the mold, press the mixture again and refrigerate
???? (Optional) Brushing the pan with oil will prevent the mixture from sticking to the sides
???? It’s really important that you take the time to press the mixture properly in the pan until firm especially the corners. This will prevent the bars from crumbling while cutting
???? To keep the cuts clean, clean the knife with paper towel in between cuts
???? You can shape the mixture into balls, if you do not want to make bars
Enjoy!

Jennifer Garner's Pretend Cooking Show - Episode 35: Pumpkin Oatmeal Cookies
Pretend Cooking Show: Pumpkin Oatmeal Cookies ????????
Pumpkin Oatmeal Cookies are the most obvious cookies you’ve never made, so Mom and I baked some for you. Fall flavors of pumpkin and spice with the nutty crunch of oatmeal—yum. In Sally's Baking Addiction (I like your recipes, Sally!) the pumpkin is canned, the sugar is sugary, the butter and eggs are rich and delish—there is even a glaze! Oh, you’ll make friends carrying around a plate of these, trust me.
Once Upon a Farm’s special blend, Farmer Jen’s Pumpkin Oatmeal Cookie (benefitting Save the Children US ????♥️), packs all of the flavor with none of the decadence. It is the organic, no sugar added, creamy, delicious, miracle of a bait and switch. Fresh fruits & veggies, there is nothing but happiness here: ????
Brown Butter Pumpkin Oatmeal Cookies by Sally's Baking Addiction
Ingredients:
- 1 cup butter for cookies, 1/4 cup for glaze
- 2 cups rolled oats
- 1 2/3 cups AP flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1 1/2 tsp ground cinnamon
- 1 1/2 tsp pumpkin pie spice
- 1 cup sugar
- 3/4 cup brown sugar
- 1 egg yolk, room temp
- 2 tsp vanilla extract for cookies, 1/4 tsp for glaze
- 1 cup pumpkin puree
- 1 1/2 cup powdered sugar
- 3 Tbsp milk
.
Directions:
1. Preheat oven to 350°. If you are doing a glaze, you can brown all butter together. Once browned, reserve 1/4 cup for glaze. Also: BLOT YOUR PUMPKIN! Gently squeezing out moisture with a paper towel makes for cakier cookies. ????
2. Slice butter into pieces and melt over medium heat, stirring constantly. Butter will start to foam, beginning to brown after 5-8 mins: brown specks at bottom of pan, nutty aroma. Once browned, remove from heat and let cool 5 mins.
3. Whisk oats, flour, baking soda, salt, cinnamon, pumpkin pie spice in medium bowl.
4. Pour 1 cup brown butter in a large bowl. Whisk in sugar and brown sugar until combined; whisk in yolk and 2 tsp vanilla. Whisk in blotted pumpkin and slowly add dry ingredients to wet. Dough will be thick and sticky.
5. Using medium cookie scoop, make dough balls and place 3 inches apart on lined cookie sheet. Slightly flatten.
6. Bake ~15 mins/lightly browned. Remove from oven and cool for 10 mins.
7. Glaze: add powdered sugar, milk, 1/4 tsp vanilla to 1/4 cup brown butter. It’s delicious.
8. YUM.
