Four-Ingredient Chocolate Chip Oatmeal Cookies
Oh yeah! These delectable little cuties are so simple to make, you just may want to make a double batch. With only four ingredients, you can’t go wrong with this easy vegan twist on a classic cookie.
3 GIANT SINGLE SERVE OATMEAL COOKIES
These Giant Single Serve Cookies are crispy on the edges and chewy in the middle. They are the perfect amount for 1-2 people. Create your favorite oatmeal cookie flavor combo with one of these three recipes.

Giant OATMEAL RAISIN COOKIE:
2 Tbsp butter, softened
2 Tbsp brown sugar, packed
2 Tbsp white sugar
1 Tbsp beaten egg
1/2 tsp vanilla
1/4 cup plus 2 Tbsp all purpose flour
1/4 tsp baking powder
1/4 tsp baking soda
pinch of salt
1/3 cup old fashioned oatmeal
1/4 tsp cinnamon
pinch of nutmeg
1/4 cup raisins
2 Tbsp nuts, walnuts chopped
Giant LEMON OATMEAL COOKIE:
2 Tbsp butter, softened
4 Tbsp sugar
1 Tbsp beaten egg
1/2 tsp vanilla
1.4 tsp lemon extract
1/4 tsp lemon zest
1/4 cup plus 2 Tbsp all purpose flour
1/4 tsp baking powder
1/4 tsp baking soda
pinch of salt
1/3 cup old fashioned oatmeal
Giant SALTED WHITE CHOCOLATE CHIP OATMEAL COOKIE:
2 Tbsp butter, softened
2 Tbsp brown sugar, packed
2 Tbsp sugar
1 Tbsp beaten egg
1/2 tsp vanilla
1/4 cup plus 2 Tbsp all purpose flour
1/4 tsp baking powder
1/4 tsp baking soda
pinch of salt
1/3 cup old fashioned oatmeal
1/4 white chocolate chips
flaky salt for garnish
Cream butter in a bowl and add in sugars. Stir to combine.
Add in extracts, (lemon extract and lemon zest for lemon cookie) and beaten egg.
Add in dry ingredients.
Add in raisins and nuts or chocolate chips for appropriate cookie.
Sprinkle salted white chocolate chip oatmeal cookie with salt before baking.
Bake at 350 degrees F. for 14 minutes or until golden brown around the edges.

Best OATMEAL RAISIN COOKIES Recipe! Chewy Soft Center, Crisp Edges.
Every bite is chewy, soft and bursting with warm flavors that make homemade cookies worth every second to bake. Make a batch of these flavourful oatmeal raisin cookies, you will love it:)

*Ingredients*
✰ 1 ¼ cup all purpose flour (150g)
✰ 1 cup quick oats (90g)
✰ 1 tbsp cornstarch
✰ 1 tsp cinnamon (2g)
✰ ¼ cup white sugar (50g)
✰ ½ cup brown sugar (100g)
✰ ½ tsp salt
✰ 1 tsp baking soda
✰ ½ cup (110g) unsalted butter
✰ 1 egg
✰ 1 tsp vanilla extract
✰ ¾ cup raisins (100g)
*Directions:*
1. Line a baking sheet with parchment paper.
2. In a bowl coat the oats with the cinnamon.
3. Soak your raisins in hot water.
4. In a large bowl, cream together the butter and sugars until fluffy.
5. Add the egg — make sure it is room temperature to avoid it curdling — and vanilla extract.
6. Sift flour, cornstarch, and baking soda. Add oatmeal mixture and salt. Stir to combine.
7. Drain raisins and pat dry. Stir into cookie dough.
8. Cover the bowl and refrigerate for 3 hours OR overnight.
9. Roll into balls, and bake in a preheated oven at 350° F / 175° C for 14 minutes (time may vary depending on the size of your cookie and the type of oven). Then, lower the oven to 300° F / 150° and cook for 3 more minutes.
*Tips:*
✰ Yields 8 CHUNK cookies (mine were fairly large).
✰ Soaking the raisins makes them plump and juicy.
✰ Please check on your cookies while they cook.

No Bake Chocolate PB Oat & Crispy Cookies!! Noreen's Kitchen
Greetings! Today I am sharing with you a great no bake recipe! These cookies are awesome using pantry staples and thrown together quickly so that you can enjoy them sooner! Who doesn't love chocolate and peanut butter? I know my family does and these cookies fill that craving!
Simple ingredients that you have on your pantry shelf and in your fridge, come together to make a great dessert or after school treat! These are even great to give away for the holidays and make for bake sales! These are even quick enough to make at a moments notice when you forgot about that cookie exchange at church the next day!
I have used PB and Co's Crunch Time peanut butter I love this one because it is all natural and you don't need to stir it. There are wholesome, ingredients that you can pronounce and the list of what's in there doesn't look like a science experiment! You can use what ever peanut butter you like or what you have on hand, but if you have the opportunity to try the PB and Co peanut butter, I highly recommend it!
You can spoon or scoop these cookies out or form them by hand and then pat them down a little and let them sit for about an hour to cool and harden. Then you can enjoy them!
If you are going to store them, make sure you place them in an airtight container layered with parchment or waxed paper. This recipe rendered approximately 40 cookies that were 1 ounce or 2 tablespoons each. That's a lot of cookies for a little bit of effort!
