rolled oats, quick-cooking
Directions:
Preheat oven to 350 degrees. Grease cookie sheets.
Beat the sugars, shortening, egg, vanilla extract and milk until smooth. Sift together the flour, baking soda, baking powder and salt. Add all at once to the egg mixture. Beat until smooth. Add the oats, mix well.
Drop from a teaspoon 2 inches apart onto the cookie sheets. Bake for 12 minutes, or until light brown.

Makes about 16-19 cookies
Ingredients:
3/4 cup + 1 tablespoon (100g) Flour
1 cup (90g) Quick Oats
1/4 teaspoon Salt
1 teaspoon Baking powder
1/2 teaspoon cinnamon (optional)
1/4 cup (60g) Applesauce
1/4 cup (50g) Sugar
1 teaspoon Vanilla extract
1/3 cup (80ml) Vegetable oil/Coconut oil
1/4 cup Dried cranberries
1/4 cup Nuts of your choice
Directions:
1. Preheat oven to 350F (180C), line baking tray with parchment paper and set aside.
2. In a large bowl whisk all dry ingredients: flour, oats, baking powder, salt and cinnamon. Set aside.
3. In a separate bowl, whisk applesauce, oil, vanilla extract and sugar. Whisk until combined.
4. Add flour mixture to the wet mixture, then add chopped nuts, cranberries and mix until dough is formed.
5. Shape the batter into small balls and arrange them onto the baking tray. Slightly flatten.
6. Bake for 12-14, until golden.
7. Allow to cool for 5-10 minutes.

Recipe: Yield 6-8 cookies
1 C Oats
1/2 C regular applesauce or 3/4 C applesauce if chunky
Added to 2nd batch:
2 T Dried cranberries
1 tsp Chia seeds
Preheat oven to 350 degrees. Mix ingredients well. On a greased baking sheet or parchment paper, squeeze and roll into 2-inch balls, and flatten with your hands or a spatula. Chill in the fridge for 20 minutes to keep the shape. Bake 20-30 minutes (depending on thickness) until toasty edges. Let cool completely. Seal in an airtight container in the fridge for up to 2 weeks or freeze for longer term.

Method:
1. Take unsalted butter in a pan and heat it until the butter is fully dissolved. Keep the flame on low.
2. Add white granulated sugar, brown sugar and mix well.
3. Add boiled and cooled milk. Mix the milk well with sugars.
4. Once the sugars dissolve, add cocoa powder and mix well.
5. Keep the flame on medium and let the mixture boil.
6. Add crunchy peanut butter and mix.
7. Add vanilla essence and a pinch of salt. Mix again.
8. Keep the flame on low and add rolled oats and instant oats.
9. Mix well so that the oats absorb the liquid mixture thoroughly.
10. Once the oats mixture thickens, turn off the stove and spread the mixture like cookies on a butter paper with the help of a spoon.
11. Let them rest for 15-20 minutes at room temperature.
12. That's all, no-bake oats cookies are ready to be served instantly.
