Vanishing Oatmeal Cookies | Quaker
It's hard not to love a crispy, chewy oatmeal cookie. This video tutorial will walk you through how to make our famous top-of-the-lid Vanishing Oatmeal Raisin Cookies.
TOOLS: Electric mixer (or hand mixer + large mixing bowl) Large baking sheet Parchment paper
DIRECTIONS: 1) Heat oven to 350°F. Line baking sheet with parchment paper and set aside. 2) In large bowl, beat butter and sugars on medium speed of electric mixer until creamy. Add eggs and vanilla; beat well. 3) Add combined flour, baking soda, cinnamon and salt; mix well. Add oats and raisins; mix well. 4) Drop dough by rounded tablespoonfuls onto parchment paper. Bake 8 to 10 minutes or until light golden brown. 5) Cool 1 minute on cookie sheets, then move to wire rack to let cool.

• 1 cup (125 grams) all-purpose flour • 1/2 teaspoon baking soda • 1/2 teaspoon fine sea salt • 3/4 teaspoon ground cinnamon • 1/4 teaspoon ground cardamom, optional • 10 tablespoons (140 grams) unsalted butter • 1/2 cup (100 grams) packed light brown sugar • 1/4 cup (50 grams) granulated sugar • 1 large egg • 1 large egg yolk • 2 teaspoons vanilla extract • 1 ½ cups (150 grams) old-fashioned rolled oats • 1/2 cup (70 grams) raisins or dried fruit • 1/2 cup (60 grams) chopped nuts, optional
