So easy and delicious date and walnut cookies.
Ingredients:
For the date and walnut paste
250 grams to 400 grams dates (pitted)
***more dates means more delicious
2 tbsp. milk or water
60 grams to 100 grams walnuts
For the dough
1 egg + 1 yolk
1/2 cup sugar or 100 grams
1/2 cup melted butter/margarine or 115 grams
2 cups All purpose flour (Mehl #550 if you live in Germany)
1 tsp. baking powder
1 tsp. fine salt
vanilla sugar
2 tbsp. ground almonds (optional)

In 2007, a friend invited me to a cookie exchange party. Everyone brings about 4-5 dozen cookies, which are divided between everyone at the party. You come with 1 type of cookie and leave with a plate of 10-15 kinds of cookies, along with a printout of all the recipes. It was how people got inspired before Pinterest existed. HA! Funny enough, back then, I didn't bake. At all. I didn't even do box mixes! I literally asked if I could bring store-bought cookies. I then consulted with a friend who did a lot of baking and managed to make some white chocolate cranberry cookies, which I brought to the party. And let me tell you - I left that party a changed person. I love the idea of cookie platters, a great variety of cookies where everyone can pick their favorite! Plus, they look pretty!
So now, Christmas means cookies. Of course, not exclusively... Christmas still means a tree and lights and candles and gifts and family and giving. But it also means lots of cookies. Hundreds of cookies. (Ok, I know some people who make thousands, but I still bake A LOT of cookies.)
Over the course of 2 days, I baked 7 kinds of cookies this year, which were then packaged up and delivered (contactless via porch/vestibule drops) to teachers, friends, and neighbors. What kind of cookies are your favorite? Chocolate? Mint? Peanut Butter? Sugar? Smores? I hope I hit some of your favorites in this video.
