How To make Date and Chocolate Chip Cake
1 cup chopped unsweetened dates
1 1/2 teaspoons baking soda
1 2/3 cups boiling water
1/2 cup margarine
1/2 cup sugar
2 eggs
1 3/4 cups all-purpose flour
1/2 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
3 tablespoons mini semisweet chocolate chips
3 tablespooons finely chopped walnuts
Combine dates and 1 1/2 teaspoons soda in small pan. Pour boiling water over d ates; stir to blend. Let stand 30 minutes. Cream margarine and sugar. Add eg gs and beat well. Combine flour, soda, baking powder, and salt. Alternately a dd dry ingredients and date mixture to creamed mixture beginning and ending wit h dry ingredients. Batter will be thin. Pour into oiled and floured 9 x 13-in ch baking pan. Sprinkle chocolate chips and walnuts over batter. Bake at 350 degrees for 25 to 30 minutes or until cake tests done. Cool. Cut into 28 piec es (4 across and 7 down).

The chocolate brownie batter is mixed in a food processor and then baked in the oven, so easy. If you can't find millet flour, sub it out with gluten free all-purpose flour. Replacing refined sugar with soaked dates gives the chocolate brownies such a great flavor and makes them much healthier because dates are low on the glycemic index.

REMOVE THE SEED
½ CUP HOT MILK
SOAK FOR 30 MIN.
BRUSH OIL & PLACE BAKING PAPER
POUR INTO BLENDER
2 BANANAS
BLEND ALL TOGETHER
POUR IN A BOWL
¼ CUP OIL
MIX UNTIL COMBINE WELL
1 CUP WHOLE WHEAT FLOUR
¼ CUP COCOA POWDER
1 TSP BAKING POWDER
½ TSP BAKING SODA
½ CUP MILK (MIX GRADUALLY)
½ TSP VANILLA EXTRACT
MIX WELL
¼ CUP CHOCOLATE CHIP
POUR IN MOULD
FIRE UP THE STOVE (MED. LOW FLAME)
PLACE A PAN & WIRE STAND
PRE-HEAT 5-7 MIN.
PLACE THE MOULD INTO PRE-HEATED PAN
COOK FOR 35-40 MIN. IN LOW MEDIUM HEAT
CAKE IS READY, COOL COMPLETELY
CUT IN TO PIECES, SERVE OR STORE INTO A JAR
