How To make Chocolate Date Picnic Cake
Cake: 1/2 c Dates; chopped
1/2 ts Baking soda
1/2 c Boiling water
1 c Flour
1/2 c Sugar
1 tb Cocoa; unsweetened
1/4 ts Baking soda
1/4 ts Salt
1/2 c Butter or margarine;
-softened 1/2 ts Vanilla
1 Egg
1/2 c Semisweet chocolate chips
Topping: 1/2 c Semisweet chocolate chips
1/4 c Nuts; chopped
2 tb Sugar

Heat oven to 350. Grease and flour bottom only of 8 inch square pan. In large bowl, combine dates, 1/2 teaspoon baking soda and water; stir. Cool 5 mintues. Lightly spoon flour into measuring cup; level off. Add flour and remaining cake ingredients except chips; blend at low speed until well combined. Beat 2 mintues at medium speed. S Stir in 1/2 cup chips. Pour batter into greased and floured pan. Sprinkle topping ingredients evenly over batter. Bake at 350 for 25 to 35 minutes or until toothpick inserted in
center comes out clean. Serve warm or cool; top with whipped cream, if desired. Exchanges: 2 starch, 1 fruit, 4 fat. -----

Or trying something with a bit more bulk. Purchase or make your own pound cake. These are durable cakes that travel well so are great for picnicking. Next, at home macerate some of your favorite fruits. Berries soaked in sugar with a bit of wine work great. When you're ready to serve, simply pour the berries over the cake and you have a wonderful finish that uses great seasonal fruit.
Another simple choice that doesn't require much work is a selection of cheese served with jams and toasted notes. Pick a few of your favorite soft cheeses along with jams and serve them together. You'll have a great flavor that is also adventurous and will provide a lot fun experimenting.
Chocolate mousse is also a good choice, because it will fit in almost any container and can be eaten out of it. Better yet, if your basket or hamper will transport wine glasses, this is a fun and exciting way to eat this recipe. Depending upon the size of your party, consult an exact recipe. Regardless the process will be to melt chocolate and then fold in whipped cream followed by whipped eggs whites mixed with sugar. This is then chilled and you have a deliciously rich and light finish.
A good way to double up a few extra ingredients lying around the house is to make date and oat slices. Simply take some oats and mix with hot molasses.
