How To make Double Chocolate, Chocolate Chip Sandwich Cookies
1/4 c Unsalted butter
1 Unsweetened chocolate
3/4 c All-purpose flour
1/4 ts Baking powder
1/4 ts Baking soda
1/2 ts Salt; or 1 tsp
3 tb Packed light brown sugar
3 tb Sugar
1 1/2 ts Vanilla
1/4 c Sour cream or buttermilk
1 lg Egg; lightly beaten
1/4 c Finely chopped pecans
Or walnuts 1/2 c Semisweet chocolate

-m Recipe by: NATHALIE DUPREE COOKS SHOW#ND7129 Preheat oven to 375 degrees. In a small pan over low heat melt the butter and chocolate together. Meanwhile, mix the flour, baking powder, baking soda, and salt together. Cool the chocolate and pourinto the bowl of a mixer. Beat in both sugars, the vanilla, sour cream or buttermilk, and egg. Add the flour mixture, nuts, and chocolate chips and mix well. Grease cookie sheets. For 3-inch round cookies, drop the batter by teaspoonfuls onto the cookie sheet, leaving about 2 inches in between each cookie. Bake at 375degrees for 8 to 10 minutes. Do not let edges brown. For 42-inch round cookies, drop the batter by tablespoons, leaving about 2 inches between each cookie. Baking time will be 12 to 15 minutes. Use a
spatula to transfer the cookies to racks to cool. To make the ganache filling, melt the chocolate and butter in a small pan over low heat or in the microwave. Gradually whisk in the cream. Let stand at room temperature, stirring occasionally, for 1/2 hour or longer, until barely thickened. Or place the bowl in ice water if you are in a hurry, but don't let the filling harden. Turn half the cookies upside down on a large piece of wax paper. Spread a tablespoonful on each of the turned cookies. Quickly cover with the remaining cookies, right sides up, and press gently down to spread the filling to the edges. Let stand at room temperature or chill briefly until the filling is set. Makes 20 small or 9 large sandwiches -----

What’s your favourite Subway cookie? I used to always get the oatmeal and raisin one, but I don’t think they sell it anymore in the UK ???? Now the double chocolate cookie is my new go-to ????
I was so excited when I tasted these cookies, as they taste just like them! Dare I say… better ???????? I ate three in one go and struggled to stop ????

All you need is:
115g Unsalted butter, melted
150g Light brown sugar
115g Granulated sugar
1 Large egg
1 tsp Vanilla extract
160g Plain flour
20g Cocoa powder
1/2 tsp Bicarbonate of soda
1 tsp Salt
100g Milk/dark Chocolate chips
100g White chocolate chips
Bake 160C (fan) 8-10 mins
Makes about 20 cookies
Tip: When they cookies come out the oven, they will look puffy and underdone. Let them cool for 15 mins on the tray before moving them. They will flatten and crinkle like in the photo ????
The texture is just like Subway cookies!

INGREDIENTS
1 1/4 cup all-purpose flour
3/4 cup cocoa powder
1 tsp baking soda
1/2 tsp baking powder
2 tbsp cornstarch
1/2 cup salted butter softened
3/4 cup granulated sugar
3/4 cup light brown sugar packed
2 large eggs room temperature
2 tsp vanilla extract
2 tbsp heavy cream
3/4 cup semi-sweet chocolate chips plus more to top the cookies if desired
INSTRUCTIONS
In a medium bowl add the flour, cocoa powder, baking soda, baking powder, and cornstarch. Whisk together then set aside.
In a large mixing bowl beat together the butter, granulated sugar, and brown sugar until light and fluffy (about 2 minutes on medium speed). Add vanilla extract and eggs and beat together until combined. Use a rubber spatula to scrape the sides of the mixing bowl.
Turn the mixer on low and gradually add half of the dry ingredients to the butter mixture. Beat until combined. Add half of the heavy cream and mix to combine. Add in the remaining dry mixture and the remaining cream.
Beat in the chocolate chips just until combined.
Cover dough with plastic wrap and chill for 1 hour in the refrigerator.
Preheat the oven to 350 degrees and line baking sheets with parchment paper.
Use a cookie scoop to make balls from the chilled dough. Roll each ball between the palms of your hands for a smooth cookie. Space 2 inches apart on prepared cookie sheets.
Bake for 9 minutes and remove from the oven. Sprinkle several additional chocolate chips over the tops of the warm, baked cookies if desired.
Transfer cookies to a cooling rack and allow to cool.
