Simple Biscotti Recipe, Double Chocolate Chip with Pistachio. Easy Step by Step recipe
Yield: About 2 dozen

Ingredients
4 large eggs, at room temperature
1 large egg yolk
1¼ cups (250 g) granulated sugar (caster sugar)
2 tsp (10 mL) vanilla extract
2 cups (300 g) all-purpose flour
½ cup (60 g) cocoa powder (Dutch process or regular)
1½ tsp (7 mL) baking soda
½ tsp (2 mL) salt
1 ¼ cups (170 g) shelled unsalted pistachios
1 cup (150 g) chopped dark chocolate chunks or chips
Directions
1. Preheat the oven to 350 F (180 C) and line a baking tray with parchment paper.
2. With electric beaters or a stand mixer fitted with the whip attachment, whip the eggs, yolk, sugar and vanilla on high speed until it holds a ribbon when the beaters are lifted, about 3 minutes.
3. Sift the flour, cocoa powder, baking soda and salt and fold this into the whipped eggs until fully incorporated (the mixture will deflate a little, and seem like a cake batter in consistency). Stir in the pistachios and chocolate chunks (or chips) and spoon this onto the prepared baking tray and spread into the rough shape of a single log - the batter will be soft, so don't worry if the shape isn't too precise. Allow this to cool for about 20 minutes and reduce the oven temperature to 300 F (150
C).
4. Remove the biscotti log to a cutting board and use a serrated knife to slice across the width into cookies that are ½-inch thick.
Arrange these on the lined baking trays (you'll need 2 trays for this step) and bake for 12 minutes. Remove the trays from the oven and flip the biscotti over, returning to the oven to bake another 12 minutes. Cool the biscotti on the tray. If you find that after cooling, the biscotti aren't crunchy all the way through, you can return them to the oven to bake a few more minutes.

All you need is:
115g Unsalted butter, melted
150g Light brown sugar
115g Granulated sugar
1 Large egg
1 tsp Vanilla extract
160g Plain flour
20g Cocoa powder
1/2 tsp Bicarbonate of soda
1 tsp Salt
100g Milk/dark Chocolate chips
100g White chocolate chips
Bake 160C (fan) 8-10 mins
Makes about 20 cookies
Tip: When they cookies come out the oven, they will look puffy and underdone. Let them cool for 15 mins on the tray before moving them. They will flatten and crinkle like in the photo ????
The texture is just like Subway cookies!

Double Chocolate Holiday Biscotti

Ingredients
2 1/4 cups all-purpose flour
1/2 cup granulated sugar
4 tablespoons (1/2 stick) unsalted butter, at room temperature
1/4 cup orange marmalade
1 tablespoon grated orange zest (about 2 oranges)
1/2 teaspoon kosher salt
3 large eggs, at room temperature
1/4 cup unsweetened cocoa powder
1 1/2 teaspoons baking powder
1 cup bittersweet chocolate chips
Directions
Preheat the oven to 350 degrees F. Line a rimmed baking sheet with parchment paper, dust with 1/4 cup flour and set aside.
In a medium bowl, combine the sugar, butter, orange marmalade, orange zest and salt. Using a handheld mixer, beat on medium speed until the mixture is smooth, light and fluffy, about 2 minutes. Beat in the eggs one at a time. Add the remaining 2 cups of flour, cocoa powder and baking powder and beat until just blended. Using a rubber spatula, stir in the chocolate chips.
On the prepared pan, form the dough into a 3-by-13-inch log. (Using a small offset spatula or dusting your hands with flour will help keep the dough from sticking to your hands.) Bake until the log is firm to the touch, cracked on top and looks dry, about 35 minutes. Cool for 30 minutes on the tray.
Place the log on a cutting board and using a serrated knife, cut the log on a diagonal into 1/2-inch slices. Arrange the biscotti cut-side down on the tray. Bake until they are a dry and fragrant, an additional 20 to 25 minutes. Transfer the biscotti to a cooling rack and cool completely.

These Double Chocolate Biscotti are one of my favorite cookie recipes to serve alongside coffee. Biscotti are different from other cookies as they are baked twice, making them crispy and perfect to be dipped into the hot coffee. They are very easy to prepare and are also a great treat for kids as well.

The word biscotti means twice baked. These Italian cookies are extra crunchy and are meant to be dipped into coffee or wine!
Today, we made anise-almond dipped in @ghirardelli chocolate and @traderjoes sliced almonds and double-chocolate almonds dipped in chocolate and chopped almonds and chocolate jimmies
NOTE: For this recipe, you would need 5-6 tsp of anise seed if you want to use that. Tradional flavor would be approximately 2 tsp per 10 ounces of flour. (I only used 4. Adjust to your own liking.)
