How To make Double Peanut Butter Cookies
1 3/4 c All-purpose flour
1/2 ts Baking soda
1/4 ts Salt
1/2 c Sugar
1/2 c Shortening
1/2 c Creamy peanut butter
1/4 c Light corn syrup
1 tb Milk
1/4 c Creamy peanut butter

Combine flour, soda, salt, and sugar; cut in shortening and 1/2 cup peanut butter with pastry blender until mixture
resembles coarse meal. Stir in corn syrup and milk. Shape dough into a 12-inch roll; wrap in wax paper, and chill at least 2 hours. Unwrap roll, and cut into 1/4-inch slices; place half of slices on ungreased cookie sheets. Spread each with 1/2 teaspoon peanut butter. Top with remaining cookie slices, and seal edges with a fork. Bake at 350 about 2 dozen. NOTE: Dough may be frozen up to 3 months. Slice dough while frozen; let thaw slightly. Assemble and bake as directed. -----

Double peanut butter chip cookies
If you are a peanut butter lover then these cookies are a must try. These peanut butter, peanut butter chip cookies have a tender texture and so much peanut butter flavor, which is nicely complemented with lots of peanut butter chips.
Prep Time - 10 minutes
Cook Time - 15 minutes
Total Time - 25 minutes
Servings - 24 cookies
2 1/4 cups all-purpose flour 270g
▢3/4 tsp baking soda 4g
▢1 1/2 cup smooth peanut butter 260g
▢1 cup 2 sticks unsalted butter room temperature 226g
▢2/3 cup granulated sugar 135g
▢3/4 cup packed light-brown sugar 200g
▢1/2 tsp salt 3g plus more for top
▢2 tsp pure vanilla extract 10mL
▢2 large eggs
▢1 1/2 cup peanut butter chips or chocolate chips 265g
These can be made with a hand mixer or a stand mixer. Whichever you have. Or even a bowl with a wooden spoon.
1.Preheat oven to 350 degrees F/ 177 degrees C. 2.In a small bowl, sift together the flour and baking soda, salt, and; set aside. Or you can do this step directly after creaming the butter and sugars.
3. Combine the butter and peanut butter with both sugars; beat on medium speed until light and fluffy.
4. Reduce speed to low; add the vanilla and eggs. Beat until well mixed, about 1 minute.
5. Add flour mixture; mix until just combined. Do not overmix
6. Stir in the peanut butter chips/chocolate chips.
7. Drop 2 tablespoon-size balls of dough about 2 inches apart on baking sheets lined with parchment paper. I weighed each to be about 50g
8. Bake until cookies are golden around the edges, but still soft in the center, 10 to 15 minutes. The longer bake time will give you a crisper cookie.
9. Remove from oven, and let cool on baking sheet 1 to 2 minutes.
10. Transfer to a wire rack, and let cool completely.

This is the perfect recipe for anyone who loves the combination of chocolate and peanut butter. Best of all, they are super easy to make and does not require a mixer to whip up.
You’ll need:
• 1 1/3 cup all-purpose flour (spooned & leveled)
• ¾ tsp baking soda
• ½ cup salted butter (room temperature)
• ½ cup creamy peanut butter (I used JIF)
• ½ cup white sugar
• ½ cup light brown sugar (packed)
• 1 large egg (room temperature)
• 1 tsp vanilla extract
• ¾ cup chocolate chips (dark or semi-sweet)
Makes 18 delicious cookies
* Using 2” cookie scoop in the video
:: HELPFUL HINTS ::
* Measure your flour correctly (spoon & level method). Adding too much flour will result to dry and crumbly texture of cookies when baked. Fluff your flour with a spoon, spooned it into your measuring cup, and use the back of the knife to level it off.
* Don’t over bake the cookies. Take it out of the oven at 12 minutes mark or when cracks are noticeable on the surface.
* Let the cookie rest in the baking pan for 5-10 minutes. Transfer to wire rack to finish cooling.

Chewy Double Chocolate Peanut Butter Cookies
The delicious combination of cacao, chocolate chips, and peanut flour come together in this decadent cookie recipe that our entire family loves. The best part? You would never guess that they were healthy, low-carb and sugar-free.
I wish I could say that this recipe was one that I created all on my own, but it is inspired by the Trim Healthy Mama cookbook. My husband and I are mostly low-carb and sugar-free so when I find a delicious recipe that we love, I have to share it. I made several changes to the original recipe, and my family loves my version of the recipe.
There are several ingredients in this recipe that are the Trim Healthy Mama brand. I use them quite often in our home for a variety of recipes. Two of those ingredients are, baking blend and peanut flour. There are many, many recipes on the internet for those who are interested in the Trim Healthy Mama way of eating, and while I don’t abide by it strictly, I do use a lot of recipes from their cookbook.
Chewy Double Chocolate Peanut Butter Cookie Recipe
8 Tbsp butter
1 Cup Birchbark Xylitol
2 Tsp Stevia
1 large egg
2 Tsp Vanilla
3/4 Cup Baking Blend
5 Tbsp Cacao
5 Tbsp Peanut Flour
1 Tsp Baking Soda
1/4 Tsp Celtic Salt
3/4 Cup Lilly’s Chocolate Chips
In a small saucepan, combine the butter and xylitol. Melt over low heat until the xylitol has completely dissolved.
Pour the xylitol and butter mixture into a mixing bowl.
Then, add all the other ingredients.
Mix well.
Line a baking pan with parchment paper.
Drop the dough by tablespoon size onto the parchment paper.
Bake for 10-15 minutes until the cookies are still soft but not quite set.
Remove from oven, and allow to cool completely before trying to remove from the parchment paper.
