How To make Downhome Cafe Banana Bread
1/2 c Butter
1 c Sugar
2 Eggs, beaten
4 Bananas, finely crushed
1 ts Lemon juice
1 1/2 c Flour
1 1/2 ts Baking powder
1/2 ts Salt
1 ts Vanilla
Cream together butter and sugar. Mash bananas. Add lemon juice to mashed bananas. Beat eggs. Add eggs and crushed bananas, to the creamed butter and sugar. Combine well. Sift together flour, baking powder, and salt. Add to creamed mixture. Add vanilla. Pour into greased loaf pan. Bake at 350 degrees for 60 minutes. Keeps well, refrigerated. Yield 1 Loaf.

Sourdough Banana Bread

Ingredients:
280g (500 mL / 2 cups) all-purpose flour (or a mix with whole wheat)
1 tsp (5 mL) baking soda
Pinch salt
120g (125 mL / 1/2 cup ) butter, softened
150g (175 mL / 3/4 cup) granulated sugar
2 eggs
1 tsp (5 mL) vanilla
2 - 3 very ripe bananas, mashed
175 mL (3/4 cup) stirred down / degassed starter
125 mL (1/2 cup) toasted chopped walnuts (optional)
Our Original Recipe:
Method:
preheat oven to 180ºC (350ºF).
In bowl, whisk together flour, baking soda and salt.
In large bowl, beat butter and sugar until fluffy.
Beat in eggs one at a time, beating well after each addition.
Beat in vanilla.
Stir in mashed bananas and sourdough starter.
Add flour mixture to banana mixture and stir to moisten.
Add walnuts, if using and stir to combine.
Scrape into 8”x4” (1.5 L) loaf pan.
Bake for about an hour or until tester inserted in centre comes out clean.
Let cool in pan on rack.
Remove from pan and let cool completely on rack.
Makes 1 loaf, about 16 slices

Banana Nut Muffins - Banana Nut Bread - The Hillbilly Kitchen
These are the best banana nut muffins you will ever eat. I'll put mine up against anyone else's any day of the world. This is a great way to use your ripe bananas and keep from throwing them away just because they are a little soft.
This is an easy recipe that I believe is good for beginners. It's pretty hard to mess these up as long as you get them done without burning them. Keep an eye on them. They shouldn't fall just by opening the oven door occasionally.
This recipe will make about 24 muffins or can be baked in a single loaf pan, if you are in the mood for banana nut bread. It will take about an hour to bake in a loaf pan.
Be careful. If you take them out of the oven before they're done they will fall every time!

Muffin Ingredients:
4 or 5 - Ripe bananas
2 Cups - Flour
1/2 Cup - Chopped pecans (or other nuts)
1 Tablespoon - Baking powder

Irish Soda Bread - Recipe - No Yeast Bread
This quick bread loaf doesn’t use yeast and is the perfect companion to a hearty stew...
Ingredients
1½ cups (375 mL / 230g) whole wheat flour
2 cups (500 mL / 330g) AP Flour
½ cup (125 mL / 45g) wheat bran
1¼ tsp (6 mL) baking soda
1 tsp (5 mL) salt
⅓ cup (75 mL) sugar
2 cups (500 mL) buttermilk
Method:
Pre heat oven to 350ºF (180ºC)
Grease & flour a bread pan (metal or clay)
Mix all dry ingredients in a bowl
Add buttermilk and mix to a gooey dough
Quickly put dough into a prepared bread pan
Cook for 1 hour

How can I make great banana bread? This is a question I asked myself for years. Apparently, there's a secret ingredient!
Along with perfect amounts of sugar, and a few delicious add ins, this recipe makes the best banana bread I have ever had! Moist & tender, with delicious flavor and texture, it is now our family's favorite recipe, and I'm happy to get to share it with you! Bonus, it's dairy free if you use dairy free chocolate chips.

Ingredients:
2 cups all purpose flour
1 3/4 cups granulated sugar
1 tsp sea salt
1 tsp baking soda
3.4 oz box vanilla instant pudding mix
4 bananas (1 1/2 - 1 3/4 cups mashed)
4 eggs
2/3 cup vegetable oil
1 cup chopped pecans
1/2 cup semisweet chocolate chips
Bake at 350 degrees for 1 hour 10 minutes, or until toothpick comes out clean. Cover loosely with foil after 40 minutes if top is browned.
