DOUBLE CHOCOLATE BANANA BREAD | Pinoy Juicy Bites
This easy DOUBLE CHOCOLATE BANANA CAKE is decadent, moist and loaded with chocolate chips. it has the right balance of chocolate and banana flavor. Perfect chocolatey indulgence in every bite and seriously you won't stop at one slice! Enjoy this delicious afternoon snack or dinner dessert.
Ingredients:
- 3 ripe bananas
- Vegetable oil 70g
- Brown sugar 95g
- Salt 1g
- 2 Eggs (Room temperature)
- Cake flour 130g
- Unsweetened cocoa powder 28g
- Baking soda 3g
- Baking powder 2g
- Vanilla extract 2g
- Chocolate chips 40g
* Extra chocolate (optional)
* Bake In preheated oven at 160°C for 60 minutes.

Day 6 of Making Healthy Desserts: 1-minute Chocolate Mug Cake???? It’s gluten-free & vegan! If you aren’t coeliac/intolerant to gluten/IBS sufferer, you can of course use wheat flour in this☺️

Ingredients:
2 tablespoons all purpose gluten-free flour mix
1 tablespoon unsweetened cacao powder
1/4 teaspoon baking powder
1 tablespoon melted coconut oil
1 tablespoon maple syrup
3 tablespoons almond milk
1 piece of dark chocolate (I used 80% dark chocolate)

1. In a mug mix the dry ingredients together
2. Add the wet ingredients and stir until combined
3. Add the piece of dark chocolate to the center
4. Cook in the microwave for 40 - 60 seconds (800W). All microwaves are different, so the cooking time might differ. I recommend checking the cake after 40 seconds and then cooking longer if needed
5. Serve with some berries, for example! Enjoy!

Banana Chocolate Snack Cake
I know this says snack cake, but don’t let the name fool you. Topped with a luscious chocolate ganache and banana slices, this snack is fit for dessert. A very short prep, using ingredients you probably have on hand, you too, can have a delicious snack cake in about 35 minutes.

Banana Chocolate Snack Cake
¼ cup, 56g, butter, softened
¾ cup, 162g, white granulated sugar
1 large egg, 50g ⅓ cup, 76g, bananas, mashed
½ teaspoon vanilla
½ teaspoon baking soda
¾ teaspoon baking powder
¼ teaspoon kosher salt
1 cup, 120g, all-purpose flour
⅓ cup, 79ml, buttermilk
⅓ cup, 72g, mini chocolate chips
Cream the butter and sugar together in a medium bowl. Add the egg and cream until light and fluffy. Add the bananas and vanilla and mix to combine. Add the baking soda, powder and salt and mix to combine. Add ½ the flour mixing until just combined, do not overmix. Add the buttermilk and mix to combine. Add the remaining flour and mix until just combined. Stir in the chips and smooth into a prepared cake pan. Bake for 25-30 minutes or until the top is golden and the cake just springs back when touched. Do not overbake.
Depan to a cake plate and allow the cake to cool for about 30 minutes. Sliced and serve warm topped with chocolate ganache and banana slices.
Chocolate Ganache
¼ cup, 56g, 60% cocoa, bittersweet or double chocolate chips
4-5 tablespoons, 59-74ml, heavy cream (36% butterfat)
Melt chocolate and cream in the top of a double boiler until smooth. Serve immediately over the cake.

1/2 cup (125ml) veg.oil = 9.74
1/2 cup(125ml)evap milk = 7.09
2 tsp.vanilla extract = 2.00
1/2 cup (85g) chocolate chips (semi-sweet) = 45.00
TOTAL = 139.98
