2 c Brown rice (uncooked),
Or 4 C cooked 2 15-oz cans of any type of
Beans 1/2 c Salsa
1 Clove garlic, minced (or 1
ts Minced garlic-in-a-jar) 1/2 lg Red onion, chopped
2 ts Cumin
2 c Tomato (ie spagetti) sauce
10 ds Tabasco sauce
If using uncooked rice, start it cooking. Rinse canned beans thoroughly in a colander. In a large nonstick frying pan add salsa, garlic, onions, and cumin. Saute until onions are limp. Add tomato sauce and tabasco sauce, and simmer. If using cooked rice, reheat it now. Five minutes before the rice is ready, stir the beans in gently and simmer until well heated. Serve beans over rice. From "Think Light" meal program, which states: Serves 4 (1-cup) servings. 1/2 green bell pepper diced
2 tbsp. parsley
half onion diced
1 cup celery diced
4 smoked andouille sausage
2 tbsp. oil
2 garlic cloves
3 tbsp. green onion
2 bay leaves
1/2 tbsp. Cajun seasoning
1 tbsp. creole seasoning
1/4 tsp sage
1 tsp chili powder
1 tsp cayenne pepper
1 tsp oregano
1 tsp thyme
black pepper to taste
2 cup water
2 cup low sodium chicken broth
2 can of red kidney beans( discard the bean water)

Cuban Black Beans and Rice
2 tsp olive oil
1/4 chopped onion
1 1/2 tbsp sofrito (substitution= 1/4 green pepper and small amount cilantro)
if you use the substitution, it is not the same as using soffrito, but I promise your rice will still taste excellent!
1 cup rice (I used jasmine)
1 cup water (yes only one cup)
1 can of black beans 15 oz
spices: 1/2 tsp salt
1/4 garlic powder
cumin
black pepper
oregano
1 bay leaf

1 medium yellow onion, chopped
1 green bell pepper, chopped
3 ribs celery
6 cloves garlic
3 cups chicken broth
3 cups water
1 tsp garlic and herb seasoning
1 tsp chicken bouillon powder
1 1/2 tsp Cajun seasoning
Salt and pepper to taste

Bring a little of New Orleans home with this Copycat Popeye’s red beans and rice recipe. Creamy red beans and spices are topped with fluffy white rice to make this simple and delicious side dish or main dish that can be made in about 30 minutes. ***Note: Popeye's doesn't have meat in their beans but it does have pork fat. This recipe does use bacon. The bacon bits can be taken out just be sure to leave the bacon grease.
