How to Make High Carb Low Fat Vegan Fideo
This is a recipe idea for making a traditional Mexican soup completely oil free and plant based. Enjoy!
Ingredients:
1 packet of fideo or any other thin pasta
4-5 very ripe (red) roma tomatos
1 whole onion
1 head of garlic
6-8 big potatoes
Salt to taste
Mushroom buillion to taste, if none available use salt or vegetable buillion
Colombian spice mix (rice flour, cumin, garlic powder, black pepper, paprika)
8-12 cups or 3 L of water
Optional:
Extra veggies you have laying around, for example spinach or green peas
Easy Low Fat High Carb Veggie Soup /WFPB/ Starch Solution
Easy low fat high carb veggie soup that is WFPB and starch solution compliant is what I am showing you today. This soup is a great way to use up any left over veggies that are about to go bad or small amounts of lentils, quinoa, or pasta that isn't quite enough to make a full meal. So we put it all together into the Instant Pot and make this delicious soup that is great for weight loss. So here is the recipe for this easy low fat high carb soup. You may customize this soup to accommodate the items you may have in your kitchen. This is what I used.
Ingredients:
10 ounces of sliced mushrooms
1/4 yellow onion chopped
1/4 red onion chopped
celery stalks chopped
one carrot chopped
one zucchini chopped
1/2 cup red lentils
1/2 cup yellow split peas
1/2 cup quinoa
1 1/2 cups finely chopped kale or spinach
1/4 to 1/2 cup pasta
1 tsp minced garlic
onion powder
garlic powder
red pepper flakes
1 tsp each of better than bouillon garlic, and veggie flavor
Instructions:
Set Instant pot to saute
add some water to saute , mushrooms and garlic for a few minutes until mushrooms release water and cook down.
Next turn off saute feature and add the rest of the ingredients except spinach or kale and give it a good stir. Make sure instant pot is on seal and set on manual for 10 minutes and then do a quick release of steam. Turn off instant pot and add greens and let wilt for a few minutes. Enjoy!

INGREDIENTS:
3 stalks (or 2 cups) of kale (any kind)
3 - 4 slices of bacon, cut into small pieces
1/2 yellow onion, finely cut
3 large garlic cloves, minced
1 large russet potato, cut into small pieces
1 lb. ground sausage, beef or chicken
4 cups of chicken stock:
3/4 cup heavy cream
1.5 Tbsp. mushroom powder, divided: (Target does not sell their spices on Amazon, so this is an affordable online option. Otherwise, you can go to either Target or Trader Joes)
1/4 tsp. red pepper flakes:
1.5 Tbsp. Italian spice mix:
Salt & pepper, to taste
Parmesan cheese (optional)
INSTRUCTIONS:
Cook bacon until crisp. Remove bacon but leave bacon fat in pan.
Add onions and cook for 3 minutes, then add the garlic and cook for
another 5 minutes. Add 1 Tbsp. of mushroom powder. Push mixture
to edge of pan.
Add the meat in the center of the pan, break it up and cook until it's no
longer pink. Don't overcook it because it will still keep cooking after
other ingredients are added.
Add chicken stock, potatoes, kale and bacon. Cook for 5 - 10 minutes.
Add the heavy cream and the remaining spices. Stir well.
Cook for another 5 minutes.
Serve with plenty of parmesan cheese (the REAL stuff, not the green
container you find on the grocery shelf!)
