How To make Sky High Strawberry Pie
:
TASTE OF HOME 3/4 /94
3 qt Fresh strawberries :
DIVIDED
1 1/2 c Sugar
6 tb Cornstarch
2/3 c Water
Red food coloring, optional 1 Deep-dish pastry shell (10
1 Inches ), baked
1 1/2 tb Instant vanilla pudding mix
In a large mixing bowl, mash enough berries to equal 3 cups. In a saucepan, combine the sugar and cornstarch. Stir in the mashed berries and water; mix well. Bring to a boil over medium heat, stirring constantly. Cook and stir for 2 minutes. Remove from the heat; add food coloring if desired. Pour int a large bowl. Chill for 20 minutes, stirring occasionally, until mixture is just slightly warm. Fold in the remaining berries. Pile into pie shell. Chill for 2-3 hours. In a small mixing bowl, whip cream until soft peaks form. Sprinkle pudding mix over cream and whip until stiff. Pipe around edge of pie or dollop on individual slices. Strawberry Rhubarb Pie
This is my Papaw's favorite Pie. I make this for him as often as I can. You have to have a taste for Rhubarb. It is very very sour but Oh So Good!!! It needs a lot of Sugar.... The Rhubarb mixed with the Strawberries is pure Heaven!! ha ha
Here is the Recipe. It is not exactly the way I made it. I add a little more Sugar and Strawberries... :)
Strawberry Rhubarb Pie Recipe

Ingredients
3 cups rhubarb stalks cut into 1/2 inch pieces (Trim outside stringy layer of large rhubarb stalks; make sure to trim away any and discard of the leaves which are poisonous; trim ends.)
1 cup strawberries, stemmed and sliced
1 cup sugar
3 Tablespoons of quick cooking tapioca
1/4 teaspoon of salt
1 teaspoon of grated orange peel
Unbaked pastry for two-crust 9 inch pie
(If making a 10 inch pie, or just want more filling, use 4.5 cups of rhubarb, 1.5 cups strawberries, and 1 1/4 cup of sugar)
Method
1 Preheat oven to 400°F. Mix the rhubarb and the strawberries with the sugar, tapioca, salt, and orange rind. Let sit for 10 minutes.
2 Turn into a pastry lined pan. Top with the pastry, trim the edge, and crimp the top and bottom edges together. Cut slits in the top for the steam to escape.
3 Bake at 400°F for 20 minutes, reduce heat to 350°F, and bake an additional 30-40 minutes longer (40 to 50 minutes longer if doing a 10-inch pie). Cool on a rack.
Serve warm or cold. If you do cool to room temperature, the juices will have more time to thicken.

This is the best rhubarb pie I have ever made and the recipe is so simple and easy! Here is what you'll need-
1 pre-made pie crust
Filling:
3.5-4 cups sliced rhubarb
1 1/4 cup white sugar
3 tbsp flour
1/4 tsp salt
2 large eggs
Topping:
1/2 cup sugar
1/2 cup flour
1/2 chilled butter
dash of salt
Bake for 1 hr at 350 degrees
