beef, chuck roast or round steak

vegetable oil

celery, chopped

beef broth

garlic, clove, minced

salt

sugar, brown

tablespoon
vinegar

teaspoon
mustard, dry

teaspoon
chili powder

each
hot pepper sauce, drops
1
each
bay leaf
1/4
teaspoon
paprika
1/4
teaspoon
garlic powder
1
teaspoon
worcestershire sauce
Directions:
In a dutch oven, brown beef in oil on both sides. Add onion and celery when meat is almost browned. Add broth; cover and simmer 3-4 hours or until meat is tender. Remove meat; cool and shred. Drain vegetables, reserving 1-1/2 cups broth. Skim off any fat. Return the meat, vegetables and broth to dutch oven; add the remaining ingredients. Simmer until heated through. (Keeps well in a slow cooker on Low heat.) Remove bay leaf before serving.
YIELD: 8 servings

Here is the recipe:
1/2 pound ground beef
1/2 pound ground pork
2 teaspoons crushed garlic, divided
5 cups marinara sauce
16oz of ricotta cheese
1 egg
1 tsp oregano
8oz shredded mossarella cheese, divided
8oz fresh baby spinach
1 package no boil lasagna noodles (15 pieces oven ready)
#marinara sauce
5 cups whole tomatoes blended
tablespoon basil
squirt of olive oil
garlic powder
mined onions or onion powder
--brown both meats in pan with 1/2 the garlic
--add marinara sauce. stir and remove from pan. leave just enough in pan to cover the bottom.
--in separate bowl, mix ricotta cheese, egg, remaining garlic, oregano and half mozzarella cheese.
--place lasagna noodles across bottom of pan on top of sauce.
--spread 1/2 of the ricotta mixture and 1/2 the baby spinach on top of noodles
--place noodles in opposite direction of last noodle layer on top of spinach. The add 1/2 the meat sauce and a layer of mozzarella cheese.
--another layer of noodles in the opposite direction again. The add remaining ricotta mixture and remaining spinach
--another layer of noodles in the opposite direction of the last noodle layer. Then add remaining meat sauce on top of the noodles. Then add remaining cheese.
--Bake in a 400F oven for 15 minutes. Reduce heat to 350F and bake for an additional 45 min to 1 hour until dish is heated through and bubbling.

--RECIPE--
▪1.5lbs/.7kg Top Sirloin Roast
▪250g/2 med-lrg red or orange bell peppers, julienned
▪125g/1lrg poblano, julienned
▪250g/1 white onion, sliced pole to pole
▪10-15g/4 cloves garlic
▪2g or 1tsp ground cumin
▪2g or 1tsp chili powder
▪2g 1tsp paprika
▪1g or 1tsp dried oregano
▪Lime, halved
▪1 bunch of fresh cilantro, chopped
▪High smoke point oil (avocado, canola, etc)
▪Salt
▪Pepper
Cut roast in half, then cut pieces in half horizontally so they’re thin (see video @:51). Salt generously with salt and pepper on both sides.
Preheat cast iron over high and add a lot of oil (4Tbsp or so). Dab any excess moisture from meat then place into hot pan. Press each steak into pan and allow to cook for 90 sec total on side 1. Flip and cook for an additional 60-90 sec. Remove beef from pan to rest.
Wipe out excess oil in pan and add peppers and onion followed by large pinch of salt. Stir to combine then cook for about 45-60 seconds, undisturbed. Stir and repeat 2-3 times until you’ve cooked the veg for about 5 min until softened slightly and beginning to char. Add spices and garlic and stir for a few seconds to take the raw edge off the garlic.
Transfer fajita veg mix to a bowl. Slice beef against the grain then add to fajita veg mix along with any resting juices, juice of ½ lime, and 1-2 pinches fresh chopped cilantro.
Reheat beef and veg in a pan over medium just to heat through. Place on fresh warmed tortilla and top with whatever you like. I use fresh tomatillo salsa, queso fresco, and fresh cilantro.
