How To make Fajita Nachos
1/4 cup lime juice
2 tablespoons olive oil
1 1/2 cups beer
2 cloves garlic
1 teaspoon ground coriander
1 teaspoon ground cumin
1 jalapeno
seeded and chopped
1 pound boned and skinned chicken breast halves :
fat
removed 32 ounces pinto beans
salt 2 medium onion diced
1/2 cup lowfat cheddar cheese
1/2 cup guacamole
15 corn tortillas :
cut in triangles
LIME SALSA 1 large tomato quartered
2 large tomatillos :
quartered
1/4 cup red bell pepper sliced
2 tablespoons red onion
1 teaspoon lime peel :
grated
1 tablespoon lime juice
For Salsa: Combine all ingredients in a food process or salsa machine and mix. Cover an refrigerate until ready to use. Marinade: Combine lime juice, 1 tablespoon oil, 1/2 cup of the beer, garlic, coriander, cumin and jalapeno in a freezer bag. Set aside 3 tablespoons and add chicken, seal and rotate bag to cover chicken. Refrigerate for 2 hours or over night, turning bag occasionaly. Fajitas: Combine reserved marinae, beans and remaining beer in a sauce pan. Cook over medium heat, stirring and mashing beans until slightly thickened. Season to taste with salt. In a frying pan add rest of oil over medium heat, add onions adn cook partially covered and stirring often until soft and golden brown. If made ahead cover beans and onion seperately, reheat when ready to use. Remove chicken from bag and drain and disgard marinade. Arrange on grate, place lid on grill and cook turning once until chicken is done. Remove from grate and cut into bite sized pieces. Spread beans onto a 10 inch circle in a large pizza pan. Top with onions, chicken, and cheese. Set pan on grate, place lid on grill and cook until cheese is melted. Top with guacamole, and some of the salsa. Tuck some of the chips around the edges. Serve with remainig chips and salsa.

Here is what you'll need!
Chicken Fajita Nachos
INGREDIENTS
3 boneless, skinless chicken breasts, cubed
2 teaspoons salt
1 teaspoon pepper
2 teaspoons chili powder
2 teaspoons garlic powder
2 teaspoons cumin
3 tablespoons vegetable oil
1 onion, halved and sliced
4 cloves garlic, sliced
3 bell peppers, seeds removed, sliced lengthwise
Juice of 1 lime
1 13 ounce bag of tortilla chips
2 cups shredded pepper Jack cheese
1 cup shredded sharp cheddar cheese
Optional Toppings
Sour cream
Salsa
Guacamole
PREPARATION
1. Preheat oven to 350˚F/180˚C.
2. Add the chicken breast to a bowl and season with salt, pepper, chili powder, garlic powder, and cumin.
3. In a large skillet, heat 2 tablespoons vegetable oil and cook chicken until slightly charred and no longer pink. Cook chicken in batches to avoid overcrowding the pan. Remove cooked chicken from the skillet, and transfer into a bowl.
4. Heat another tablespoon of oil, add the onions and cook for a couple minutes until onions are slightly translucent.
5. Add the garlic and peppers and cook slightly, then remove from heat. Transfer garlic and peppers to the chicken bowl, then top with lime juice.
6. Lay down half the tortilla chips on the skillet, followed by half the fajita mixture, and top with pepper Jack and cheddar cheese. Repeat with the remaining ingredients.
7. Bake until the cheese has melted, about 15 minutes.
8. Enjoy!

These steak fajita nachos on the griddle were literally the best nachos we’ve ever had… whether homemade or at a Mexican restaurant! There are a few secrets to making griddle nachos the best you’ve ever had:
- Frying your own tortilla chips and adding Tajin seasoning and/or salt immediately when they come out of the oil.
- Making your own quick refried beans using canned pinto beans, some basic seasonings, and mashing them up in a skillet.
- Marinating your steak in our easy and amazing steak fajita marinade.
- Making your own Mexican style smoked white cheese dip.
Each individual component of these steak fajita nachos was incredible on its own - the smoked quest dip, the steak, the pico de Gallo, the fresh fried chips - and then when you combine them together it’s pure griddle nachos perfection!

3 Large Avocados
1/2 Lime (juiced)
1/2 Red Onion (diced)
1/4 cup Cilantro
1 Jalapeno (diced)
Adobo - Salt, pepper, garlic, onion powder (to taste)
Queso w/ Rotel -
8 oz Monterey Jack
8 oz Queso Melt (or queso blanco)
2 tbsp butter
1 tbsp flour
1 cup of whole milk (use 1/2 and then the other 1/2 to thin the sauce)
1 can Fire Roasted Rotel
salt, pepper, cayenne pepper
Ground Beef -
1 lb 80/20 Ground Beef (use whatever protein you prefer)
salt/pepper/garlic/onion powder
ancho chile powder
chili powder
cumin
Nachos:
1-2 packs of corn or flour tortillas (quartered)
shredded cheese
oil for frying
sour cream
(Add whatever toppings you prefer!!)
Directions:
Make your Guac in advance and keep it cool in the fridge until you're ready to plate. Taste as you go and adjust the seasoning as needed. Fry your tortillas at 350 degrees for about 90 seconds or until they are golden brown and crispy. Making your own tortilla chips at home is totally worth it because they hold up so much better to all of these toppings and they are delicious! You can keep the tortilla chips warm in the oven at 200 degrees while you prep everything else (make sure to salt the chips as soon as they get out of the oil)
Cook your ground beef over medium high heat and season to taste. Use a slotted spoon when adding to your nachos to avoid excess oil.
Make your queso by starting with a roux. (Butter and flour). Add cold milk to the roux and increase the temperature to medium high - mixing constantly. (I recommend starting with half of the milk at first and then using the other half to thin the cheese sauce to your preferred consistency toward the end). Reduce the heat to low and slowly incorporate your cheese - mixing until everything is smooth and melted nicely. Add the remainder of the milk as needed and then season to taste. Add your Rotel if desired.
Finally, plate your nachos with all of your favorite toppings! Enjoy!
