How To make Fall Lamb And Vegetable Stew

lamb, stew meat

tomatoes

summer squash

zucchini
1
each
potatoes

mushrooms, can, sliced
1/2
cup
bell peppers, chopped
1
cup
onions, chopped
2
teaspoon
salt
1
each
garlic, cloves, crushed
1/2
teaspoon
thyme, leaves
1
each
bay leaves
2
cup
stock, chicken
2
tablespoon
butter
2
tablespoon
flour
Directions:
Peel, seed, and chop tomatoes. Slice summer squash and zucchini. Dice potatoes.
Place lamb and vegetables in crockpot. Mix salt, garlic, thyme, and bay leaf into stock; pour over lamb and vegetables. Cover and cook on low 8 hours. (Don't peek. Lifting the lid prolongs cooking time.)
Turn to high. Blend flour and butter, then shape into small balls. Drop into stew and cook, stirring several times, until thickened.
Serve over hot noodles or rice.

ANGLO-INDIAN BROWN STEW - MEAT AND VEGETABLE STEW
Ingredients
1/2 kg meat either beef, lamb or mutton cut into medium pieces
3 carrots, 4 French beans, 3 potatoes, 3 knolkhol all cut into fairly big pieces
3 green chilies slit lengthwise
2 medium size tomatoes chopped
1 big onion sliced
2 teaspoons ginger garlic paste
3 or 4 cloves, 2 pieces of cinnamon
6 or 7 pepper corns or 1 teaspoon ground pepper
A few mint leaves
Salt to taste
2 tablespoons oil
2 tablespoons flour
Heat oil in a pressure cooker or a pot and add the onions, cinnamon, cloves, pepper corns and green chillies and fry till light brown.
Add the tomatoes, ginger garlic paste, salt, mint, pepper and the meat and fry for a few minutes.
Add sufficient water and cook till the meat is tender.
(You could either pressure cook it or cook on Low heat on the gas hob)
Once the meat is soft, add the vegetables and cook till they are tender
Make a thin paste of the flour and about ¼ cup of water and mix into the cooked meat and vegetables and simmer for 5 minutes.
Serve hot with bread or hoppers.
Note: For Dumpling Stew, make dumplings as follows and add along with the meat and vegetables while cooking.
To make the dumplings, you will need 1 cup of flour, 1 teaspoon butter and a pinch of salt. Mix all together with a little water to form soft dough. Form into small balls and flatten slightly. Add to the stew while cooking.

Mutton Stew with Vegetables and Dumplings
MUTTON STEW WITH VEGETABLES AND DUMPLINGS
1 kg Mutton
5 tbsp oil
2 onions sliced
1 tsp crushed pepper
2 tsp tyme
1 tsp garlic powder
1 tsp onion powder
1 tsp ginger powder
Salt to taste
5 carrots
1 cup peas
2 potatoes cut into 4
2 cups cabbage
1 cup green beans
1 stock pot
METHOD
in a large pot add oil and fry onions with tyme and pepper till golden brown. Add Mutton and salt, garlic powder, ginger powder, onion powder and stir. Fry for 10 minutes. Add water and stock pot, cook for 35 minutes
Add the veggies and cook for 15 to 20 minutes. Lower temperature to medium and add spoonfuls of dumpling and cook for 10 minutes or until done
DUMPLINGS
1and 1/2 cup self raising flour
1/2 cup plain flour
1 small onion finely chopped
1/2 tsp tyme
1/2 tsp black pepper
1 tsp salt
A little more than 1 cup water
Make into a thick batter.
Please note if you're using 2 cups plain flour use 1 and 1/2 tsp baking powder
