Meat Loaf

Ingredients
1 tablespoon good olive oil
3 cups chopped yellow onions (3 onions)
1 teaspoon chopped fresh thyme leaves
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
3 tablespoons Worcestershire sauce
1/3 cup canned chicken stock or broth
1 tablespoon tomato paste
2 1/2 pounds ground chuck (81 percent lean)
1/2 cup plain dry bread crumbs (recommended: Progresso)
2 extra-large eggs, beaten
1/2 cup ketchup (recommended: Heinz)
Directions
Preheat the oven to 325 degrees F.
Heat the olive oil in a medium saute pan. Add the onions, thyme, salt, and pepper and cook over medium-low heat, stirring occasionally, for 8 to 10 minutes, until the onions are translucent but not brown. Off the heat, add the Worcestershire sauce, chicken stock, and tomato paste. Allow to cool slightly.
In a large bowl, combine the ground chuck, onion mixture, bread crumbs, and eggs, and mix lightly with a fork. Don't mash or the meat loaf will be dense. Shape the mixture into a rectangular loaf on a sheet pan covered with parchment paper. Spread the ketchup evenly on top. Bake for 1 to 1 1/4 hours, until the internal temperature is 160 degrees F and the meat loaf is cooked through. (A pan of hot water in the oven, under the meat loaf, will keep the top from cracking.) Serve hot.

Ingredients
1 LB of ground beef
1LB of ground veal
3 slices of white bread
1 cup of skim milk
2 eggs - beaten
1/2 cup of chopped sweet peppers
2 chopped onions
1/4 cup of grated parmesan cheese
1/4 cup of Worcestershire sauce
1/2 cup of Ketchup
1 tablespoon of Spain Spice All n one
1 tablespoon of Garlic powder
1 tablespoon of Onion powder
1 tablespoon of minced garlic
1 teaspoon of Ground Thyme
1/2 teaspoon of ground mustard
Glaze
1/4 cup of Ketchup
2 tablespoon of Worcestershire sauce
1/4 cup of sweet chili sauce
2 tablespoons of yellow mustard
Preheat oven to 350 degrees
Cook time - 45 minutes to 1 hour - Check for doneness
Baste with glaze during cook

Two easy mini meatloafs cooked in a NuWave mini oven.

¼ cup diced onion,
¼ cup diced green bell pepper
1 egg
1 pound ground beef (80/20)
1/8 teaspoon black pepper
2 teaspoons garlic powder
2 tablespoons Worcestershire sauce
½ cup crushed Stove Top Stuffing (savory herbs)
Salt & Pepper tops of loafs
Topping: spicy ketchup
Bake at 275 f. in NuWave oven until internal temp. of 160 (approx. 35 minutes).

Meatloaf Muffins - Cooking Today with Chef Brooks
Meatloaf Muffins
Ingredients
1 ½ lbs. ground sirloin
½ lb. ground pork
1 medium onion, cubed
2 celery ribs, sliced in 2 inch pieces
1 green bell pepper
1 large egg
1 cup plain bread crumbs
Tone's Salt & Pepper
1 tablespoon Tone's Crushed Red Pepper Flakes
1 cup smoky barbeque sauce (*see below)
1 tablespoon Worcestershire Sauce
*Barbeque Sauce
Ingredients
1 -- 44oz. bottle Ketchup
2 tablespoons chili garlic sauce
1 cup apple cider vinegar
1 ½ tablespoons molasses
2 teaspoons Hoisin Sauce
1 tablespoon Worcestershire Sauce
Make
•Preheat oven to 400⁰F.
•Place ground pork in a large bowl.
•Dice the onion, pepper and celery and add to the bowl. Season with Tone's Salt, Pepper and Crushed Red Pepper Flakes.
•Add ground beef to the top of the bowl. Add Worcestershire, egg and bread crumbs.
•Using your hands, combine all ingredients together, making your meatloaf ball about the size of a baseball.
•Pinch, roll and place in muffin cups.
•Bake for 20-22 minutes (juice should run clear when finished).
•While baking, make barbeque sauce: combine all ingredients in a sauce pan and simmer for 30 minutes.
•Remove muffin tins from oven, and top with barbeque sauce when serving.
