Light and Fluffy Victoria Sponge Cake Recipe
A classic British dessert, we never get tired of the Victoria sponge cake. In this recipe, I am showing you how to make a delicious fluffy and light vanilla sponge cake, a light creme chantilly and a raspberry jam. This recipe is super delicious, there is just the right amount of sweetness and a bit of tanginess from the jam... love it!

Ingredients:
Vanilla Sponge Cake:
- 4 eggs
- 140 g caster sugar
- 120 ml of sunflower oil
- 120 ml of whole milk
- 1 tbsp water
- 1 tbsp vinegar
- 1 tbsp baking powder
- 230 g flour
- Pinch of salt
- 1 tbsp vanilla extract
Raspberry jam:
- 400g of frozen raspberries (or any berries you like)
- 3 tbsp of icing sugar
- juice of 1 lemon
Creme Chantilly:
- 250 ml double cream
- 50g icing sugar

* Ingredients
1. Dough
350g (2.4 cups) All purpose flour
25g (2 tbsp) Sugar
210g (0.87 cup) Lukewarm Milk
4g (1/2 tbsp) Instant yeast
15g (1 tbsp) Cooking oil
2. Custard filling
3 Egg Yolk
60g (0.3 cup) Sugar
20g (2.5 tbsp) Cornstarch
20g (2.5 tbsp) Cake flour
200g (0.83 cup) Milk
45g (3 tbsp) Unsalted butter
Steam for 10 minutes, turn off the heat and simmer for 5 minutes
* Important tips
1. Heat on medium-low heat, if the filling is a little dry, the buns will be more shaped. If the filling is soft, the buns will easily collapse.
2. The recipe I gave can make 14 buns, each small dough weighs 41 grams, and the filling weighs 25 grams each.
3. Only need to ferment once, it takes about 1 hour. Depending on the room temperature, Please check the state of the dough.
4. Steam for 10 minutes after the water is boiling, then turn off the heat and simmer for 5 minutes before removing the lid.

Please note that this recipe IS NOT entirely created by us. We are using the Jiffy Golden Yellow Cake mix and adding our own flare. We are not an affiliate or a representative of Jiffy, nor do we take ownership of their cake mixture.
Ingredients/Other Items:
1. 1 Box of Jiffy Golden Yellow Cake Mix (9 ounces).
2. 1/3 cup of cold water
3. 1 Egg
4. 2 Tablespoons of melted butter
5. 1/3 cup of Coconut Milk
6. Clear plastic cupcake boxes,
7. Cupcake liners,
8. The open Star Piping tip,
Directions:
1. Preheat oven to 350 degrees.
2. 8 Cupcakes.
3. Add the Jiffy mix in a bowl.
4. Add the wet and dry ingredients together. The egg, cold water, melted butter and the coconut milk.
5. Mix the ingredients together.
6. Blend for about 2-4 minutes or until creamy texture is achieved.
7. Spray the cupcake liners with butter spray.
8. Put mixture into a measuring cup.
9. Fill the cupcake liners about2/3 to 3/4 of the way, don’t fill to the top.
10. Clean up spillage from the pan.
11. Bake for about 20-22 minutes.
12. Toothpick test.
13. Let cupcakes cool off for 30 minutes.
14. Frosting is optional, we use any chocolate or vanilla flavor.

Fluffy Strawberry Shortcake Recipe : This strawberry shortcake is made with moist and fluffy vanilla sponge cake layers filled with light and sweet whipped cream and fresh strawberries. Here in this strawberry shortcake recipe I am using light cream cheese frosting instead of whipped cream which imparts a richer flavor to the cake.

Fluffy Strawberry Shortcake Recipe

7 Medium eggs at room temperature
1 Cup or (200g) Granulated sugar
1/4 tsp Salt (if you use unsalted butter)
2 Cups or (240g) Cake Flour
4 tbsp or (57g) Butter (melted)
1 tsp Vanilla Extract
Whipped Cream
Cream cheese 120g
Cream 1 Cup / 250 ml
Vanilla extract 1/2 tsp
Powdered sugar 2 tbsp
Butter 1 tbsp
Fresh Strawberries 250g
Preheat the oven to 165 degree Celsius.
In a heatproof bowl, whisk together the eggs and the sugar.
Place the bowl over a saucepan of boiling water, making sure the bottom of the bowl isn’t touching the water.
Whisk the mixture constantly over the saucepan of hot water.
Using an electric mixer with the whip attachment, beat the mixture on medium-high speed until it becomes very light and fluffy, about 10 minutes. It should be lighter in color, and be very thick; the batter should fall in ribbons from the beater.
Remove the bowl from the saucepan.
Add butter and vanilla and mix well.
Add the cake flour in 2 to 3 additions and fold in gently to incorporate. Make sure not to over mix or deflate the eggs.
Transfer the batter into the lined 8 inch pan and tap to remove any large air bubbles.
Bake in a preheated oven @ 165 C for 30 to 35 minutes, or until a skewer inserted in the middle comes out clear.
The finished cake will be gold brown and spring back when touched lightly in the center.
Take it out of the oven and let it cool down completely before cutting the cake.
Make light cream cheese frosting by whipping cream cheese, cream, vanilla and powdered sugar in a large bowl until stiff.
Cut the cake into two add whipped cream cheese frosting and strawberries between the layers and on top of the cake and enjoy!
