How To make Fluffy Grasshopper Pie
1 1/2 c Reduced fat Oreo cookie
-crumbs 1/4 c Reduced fat margarine,
-melted 3 tb Granulated sugar
3 oz Lime gelatin powder
2/3 c Boiling water
1/2 c Cold water
Ice cubes 1 ts Peppermint extract
8 oz Cool Whip Free, thawed
To prepare crust, combine crumbs, margarine, and sugar in a mixing bowl. Press mixture firmly in a 9" pie pan. Spread crumb mixture evenly in pie pan. Chill 1 hour, or until firm. To prepare filling, completely dissolve gelatin powder in boiling water. Combine cold water and ice cubes to make 1 1/4 cups. Add to gelatin mixture, stirring until slightly thickened. Remove any unmelted ice cubes. Fold peppermint extract into whipped topping. Using wire whisk, blend whipped topping mixture into gelatin mixture. Then, whip until smooth. Chill until mixture mounds. Spoon into crust. Chill 2 hours. How to Make Grasshopper PIe
Grasshopper Pie is a frozen minty flavored pie with an Oreo cookie crust. Its no-bake filling contains a whipped fluffy marshmallow mixture spiked with Creme de Menthe and Creme de Cacao, and frozen before serving.
???? Ingredients ????
▢ 30 Oreo cookies
▢ 6 Tablespoons butter, melted
▢ 30 large marshmallows
▢ 2/3 cup half and half
▢ 1 cup heavy cream
▢ 1 teaspoon vanilla extract
▢ Extra cookie crumbs, for garnish
▢ 2 Tablespoons Creme de Menthe Liqueur (more to taste)
▢ 2 Tablespoons Creme de Cacao Liqueur

⭐️Oreo Crust:
Add the whole Oreo cookies to a food processor and pulse into fine crumbs. Pour the crumbs into a bowl and stir in melted butter.
Press mixture evenly and firmly into the bottom and up the sides of a 9in pie dish. Bake for 10-12 minutes. Set aside to cool.
⭐️Grasshopper Pie Filling:
Mix marshmallows and half and half in saucepan over medium low heat, stirring constantly, until marshmallows are melted. Remove it from the heat and put it in the refrigerator to cool for about 20 minutes. Be sure to scrape the marshmallows from the side of the pan and stir them after about 10 minutes in the refrigerator to prevent the marshmallows from hardening.
Once the mixture has cooled, stir in the creme de Menth, creme de cacao, and food coloring.
In a separate large bowl, use a mixer to beat the heavy cream to stiff peaks. Fold cream into mixture and poor into cooled pie crust. (optional- sprinkle the top with cookie crumbs or grated chocolate).
Freeze the pie for at least 2 hours or refrigerate for at least 6 hours uncovered until the top is set and then covered with plastic wrap.

Two Versions of Grasshopper Pie - Which Do YOU like the Best?
I love bringing back my childhood memories with favorite foods I remember growing up with. This was a favorite pie I remember during the holidays or when my mom would make it for when my parents hosted Pinochle at our house. There usually were left overs and I loved when I could have a piece of this pie. And yes, it does have alcohol in it. This pie is lite, fluffy, a hint of mint and oh so wonderfully delicious.
Did you know that the grasshopper drink originated around 1918 and the recipe for the pie was developed around the 1950’s?
I made two different versions of this pie. Why? Because I couldn’t make up my mind which pie I liked best. I think I’m leaning more towards the traditional (1) marshmallow cream recipe vs. (2) the cream cheese recipe. Both are amazing but you can decide. I’d love to know what you think. Note: I chose not to use the green food coloring. I thought it had a nice green color already
