How to Make a Mint Chip Ice Cream Pie With Oreo Crust
Mint Chip Ice Cream Pie has a crust made with crushed mint flavored Oreo cookies. The ice cream filling has a middle layer of more crushed cookies then, topped with chocolate curls. It sounds hard to make, but it is quick and easy. Use my Oreo Cookie Crust recipe and my homemade Mint Chip Ice Cream recipe.

Ingredients
Mint chocolate cookies:
3/4 cup butter, room temperature
1 cup sugar
1/3 cup brown sugar
1 tablespoon kosher salt
3/4 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon mint extract
5 egg yolks
1 3/4 cups all-purpose flour, sifted
1 1/3 cups cocoa powder, sifted
Mint hot fudge:
1 cup sugar
3/4 cup cocoa powder, sifted
1 cup heavy cream
8 tablespoons butter, cubed
1 teaspoon mint extract
Assembly:
8 tablespoons butter, melted
1 container mint chip ice cream
1 1/2 cups chocolate chips
Baked mint chocolate cookies
Fresh mint
Instructions
Mint chocolate cookies:
Cream butter and sugars until combined. Add salt, baking powder, baking soda and mint extract and mix until combined, scraping the bowl when necessary. Add the yolks one at a time, mixing well after each addition. Scrape the sides of the bowl, then slowly add the flour and cocoa powder while the mixer is running on low. When mix is uniform, divide into two balls and wrap in plastic wrap. Refrigerate for 30 minutes.
Preheat oven to 350 degrees. Roll out half of the dough. Cut into simple square cookies, and place on a parchment-lined baking tray. Roll out the other half of the dough, and cut into assorted shapes of your choosing, all similar in size, and place on a separate parchment-lined baking tray. Bake the cookies for 14 to 20 minutes, depending on size.
Mint fudge sauce:
In a small saucepan, combine cocoa powder and sugar. Place over medium-low heat and whisk in heavy cream. Slowly add in the butter, whisking well after each addition. When all butter is incorporated, remove from heat and add the mint extract. Pour into a heat-proof container and set aside to cool. Will keep up to one week refrigerated.
Assembly:
Crush square mint chocolate cookies into crumbs. In a medium bowl, combine cookie crumbs with melted butter, and press into a 9-inch pie tin. Freeze for 30 minutes. Smooth mint chip ice cream over chilled crust. Freeze overnight. Garnish with cookies, chocolate chips, a drizzle of mint hot fudge and fresh mint before serving.

Here's How to Make a Grasshopper Pie probably the easiest way possible, using Cool Whip, cream cheese and sweetened condensed milk. It's creamy, minty, chocolaty and overall just a fantastic no-bake dessert. And because it's a beautiful green color, it's also perfect for St. Patrick's Day! So, if you want to make a Grasshopper Pie, but don't want to bother with melting marshmallows, read on for the easy recipe.
Grasshopper Pie
For the pie crust:
25 Oreo cookies
4 Tbsp. melted butter
Place cookies (no need to remove cream filling)in food processor and purée into fine cookie crumbs. If you don't have a food processor, place cookies in a ziplock bag, seal, and crush finely with a rolling pin. Add Melted butter to cookie crumbs and mix well. Dump cookie crumbs into 9 pie plate and press down to form smooth pie shell. (It's helpful to use the bottom of a cup to press down.) Place pie shell in refrigerator to chill for 30 minutes.
For pie filling:
1 8oz. block cream cheese, softened
1/4 cup sweetened condensed milk
1 8oz. tub whipped cream (plus more if you choose to decorate top with it.)
1 tsp. vanilla extract
1 tsp. mint extract
green food coloring
In large mixing bowl, combine cream cheese and sweetened condensed milk using an electric hand mixer. Add vanilla extract, mint extract, and 10 drops of green food coloring. Mix until smooth. Fold in whipped cream and with a rubber spatula, whip together until you have a smooth, evenly colored consistency. (If you want your pie a darker green, add more food coloring a drop or two at a time.) Pour pie filling into pie shell and spread out evenly, making sure the top is smooth. Decorate top of pie to your liking, and chill in refrigerator 6-8 hours before serving.
