Don’t throw out that overly ripe banana that’s been on your counter for too long—make my single serve banana bread! This is such an easy treat that comes together in a fraction of the time it takes to make a loaf of banana bread. It’s perfect for when you have a sweet craving for baked goods, but no patience to wait for a long bake time. Plus, who doesn’t love a single-serve dessert? Of course you could share this, but where’s the fun in that.
All you need is one very ripe banana (brown spots on the banana peel indicate over ripeness—a good thing in this recipe), a few kitchen staples, and 5 minutes of prep time. Whisk together the ingredients, pour the batter into a lined ramekin or any single-serve oven-safe dish, and wait 30 minutes for this incredible bread to bake up. I like to enjoy mine warm with a bit of powdered sugar dusted on top, or a scoop of ice cream if I’m feeling indulgent. Some completely optional, but delicious, additions to the batter include crushed walnuts, chocolate chips, or a spoonful of almond butter.
These single serve banana breads would make for an impressive spread at a brunch party. You can bake multiple ramekins on a large baking sheet, which allows you to easily transfer many individual dishes in and out of the oven at the same time.

Easy Homemade Double Chocolate Banana Bread Recipe
This banana bread is incredibly tender, moist and flavorful, loaded with ripe bananas and chocolate chips.
INGREDIENTS
3 large ripe bananas
2 eggs
3/4 cup granulated sugar (150g)
1 tsp vanilla
1/3 cup oil (80ml)
1 1/4 cups all-purpose flour (170g)
1/3 cup cocoa powder (35g)
1 tsp baking powder
1/4 tsp baking soda
1/2 tsp salt
3/4 cup chocolate chips or chunks (130g)
Bake for 50-60 minutes at 350°F (180°C).

It’s super easy to make and it tastes absolutely incredible ????

All you need is????
For the cake:
225g unsalted butter, melted and slightly cooled
150g granulated sugar
50g light brown sugar
2 large eggs
2 tsp vanilla extract
250g plain flour
1 tsp bicarbonate of soda
1/4 tsp salt
4 Medium bananas, ripe, mashed
For the apple mix:
2 medium Granny Smith apples (peeled and diced)
2 tbsp granulated sugar
1 tsp cinnamon
Bake 160C (fan) 55-65 mins or until a toothpick comes out clean
Tin size: 8.5x5” 3lbs

¼ cup greek yogurt / sour cream / or cream cheese
2 eggs
¼ cup coffee liquor
Dry:
2 cups AP flour
1 tsp baking soda
1 teaspoon kosher salt
Toppings:
2 tbsp turbinado sugar for toppings
¼ cup crushed pecans for toppings
Bake at 350F for 50 minutes
Make sure to grease a 9 x 5 inch loaf pan with butter or nonstick spray
