How To make French Toast with Fresh Blueberries
3 eggs
1 teaspoon vanilla
Water Cinnamon, to taste 2 tablespoons butter
1 loaf white bread or challah, -- cut into 1-inch slices
2 cups fresh blueberries, -- rinsed
Powdered sugar Maple syrup, warmed in microwave
In a shallow dish beat together the eggs, vanilla, splash of water, and cinnamon. In a non-stick skillet or griddle melt butter over moderate heat. Dip bread slices into egg mixture and transfer to hot skillet and cook for 2-3 minutes per side until golden brown. Transfer French toast to a plate, sprinkle with blueberries and powdered sugar. Serve with warm maple syrup.

INGREDIENTS
- 1 loaf challah bread, sliced into 1-inch slices
- 2 cups blueberries (fresh or frozen)
- 7 large eggs
- 1 3/4 cups whole milk
- 1 cup heavy cream
- 1/2 tsp salt
- zest from one lemon
- 2 tbsp lemon juice
- 1/2 cup sugar
- 2 tsp vanilla extract
- 1 1/2 tsp cinnamon
- 1 cup toasted and chopped pecans
INSTRUCTIONS
- Grease a 9×13 baking dish with butter and set aside.
- Shingle the slices of bread into the prepared baking dish. Sprinkle 1 1/2 cups of blueberries over the slices of bread, allowing them to fall into the cracks.
- To make the custard, crack eggs into a large bowl. Whisk until smooth. Add the milk, heavy cream, salt, zest, lemon juice, sugar, vanilla, and cinnamon. Whisk to combine and pour over the prepared bread, ensuring to moisten each slice. For overnight French toast, cover tightly with plastic wrap and chill for up to 8 hours.
- If wanting to bake the same day, allow the bread to soak for 30-60 minutes. When ready to bake, preheat the oven to 350°F. Top the French toast with remaining blueberries and chopped pecans. Bake until puffed and golden brown, 45-55 minutes.
- Remove from the oven and cool for 10 minutes. Serve with powdered sugar and maple syrup.

French Toast Casserole with Blueberries -- Lynn's Recipes
Lynn demonstrates how to make a bake French Toast with Berries. This is a delicious breakfast casserole that can be served with maple syrup. Pair with fresh fruit or bacon for a delicious meal. From Giada De Laurentiis.
6 eggs
3 cups milk
¾ cup maple syrup, plus extra for serving
2 teaspoons ground cinnamon, plus 1 Tablespoon
¼ teaspoon fine sea salt
Zest of 1 lemon
3 (1 thick slices -- 8 ounces) day old challah or sourdough bread, cut into 1 cubes
2 cups (12 ounces) fresh or frozen, thawed and drained blueberries*
3 tablespoons sugar
Place an oven rack in the middle of the oven. Preheat the oven to 350°. Spray a 9x13 casserole dish and set aside.
In a large bowl, beat the eggs until frothy. Add the milk, maple syrup, cinnamon, salt and lemon zest. Add the bread cubes and mix until coated. Stir in the blueberries. Pour the mixture into the prepared baking dish.
In a small bowl, mix together the remaining cinnamon and sugar. Sprinkle the cinnamon sugar over the egg mixture in an even layer. Bake for 40-45 minutes until the top is golden and the filling is set.
*If you use frozen blueberries, it will probably turn your batter a bluish-gray color, which doesn't affect the taste at all.
Spoon onto serving plates and drizzle with maple syrup.
