INGREDIENTS & PROCESS:
Soaking Fruit:
¼ Cup Tutti Frutti
2 Tbsp Red Cherry
2 Tbsp Apricot
2 Tbsp Black Raisin
2 Tbsp Golden Raisin
2 Tbsp Red Raisin
2 Tbsp Dates
1/3 Cup Fresh Orange Juice
Soak For 30 Min.
Separate 2 Tbsb Fruits For Using Later
1 Cup Flour
1 Tspn Baking Powder
½ Tspn Baking Soda
½ Tspn Cinnamon Powder
¼ Tspn Nutmeg Powder
Sieve
½ Cup Brown Sugar
Soaked Fruits
1 Tspn Orange Zest
1 Tbsp Pichtachio
1 Tbsp Almond
1 Tbsp Cashew Nut
¼ Cup Butter
¾ Cup Milk
1 Tspn Vanilla
Mix Well
6 Inch Oil Greased Mould With Baking Paper
Pour The Batter
Soaked Remaining Dry Fruits
Place A Pan With Wire Stand
Pre-Heat For 5-7 Min.
Place The Mould
Bake For 35- 40 Min.

คริสต์มาสฟรุ๊ตเค้ก(รัมฟรุ๊ตเค้ก) Christmas Fruit Cake Recipe

คริสต์มาสฟรุ๊ตเค้ก หรือ รัมฟลุ๊ตเค้ก เป็นเค้กที่นิยมทำในช่วงเทศกาลวันคริสต์มาสและปีใหม่ เป็นเค้กที่เก็บได้นาน ยิ่งบ่มนานยิ่งอร่อย บางคนทำฟรีซไว้เป็นปี ทำปีนี้กินปีหน้าก็มีค่ะ
ฟรุ๊ตเค้กจะอร่อยไม่ใช่แค่เนื้อเค้กอร่อยเท่านั้นแต่ผลไม้ต้องดีต้องอร่อยด้วย เพราะเมนูนี้มีผลไม้อยู่ในเนื้อเค้กจำนวนมาก ดังนั้นการเลือกผลไม้มาใช้ก็มีผลต่อความอร่อยอย่างมากค่ะ ผลไม้บางชนิดก็ไม่เหมาะจะมาใส่เนื้อเค้กต้องระวังด้วย และต้องให้เวลาในการหมักผลไม้ด้

ส่วนผสม
A : หมักผลไม้
- เหล้ารัมคุณภาพดีๆ / Rum = 190ml
- น้ำส้มเข้มข้น / Concentrated orange juice = 40 ml (จะช่วยให้ฟรุ๊ตเค้กสดชื่นขึ้น แต่ถ้าไม่ชอบตัดออกได้แล้วไปเพิ่มในส่วนรัมแทน)
- ผลไม้แห้งและเชื่อม / Dried fruits = 700 g (*มีต่อด้านล่าง)
- ถั่วชนิดต่างๆที่อบสุกแล้ว/ Nuts 200g (เช่น อัลมอนด์ เม็ดมะม่วงหิมพาน พีแคน เป็นต้น Almond, cashew nuts, pecans )

B : Cake
- เนยจืด Unsalted butter = 226 g
- น้ำตาลแดงโอทึ้ง brown sugar = 120g
- น้ำตาลทรายขาว white sugar = 30g
- ไข่(เบอร์0) / Eggs (XL) = 4 ฟอง
- แป้งเค้ก Cake flour = 95 g
- แป้งเอนกประสงค์ purpose flour 95g
- ผงฟู / Baking powder 1 ช้อนชา Tsp
- อบเชย Cinnamon 1 ช้อนชา Tsp
- ออลสไปร์ Allspice 1/2 ช้อนชา TSp
- เกลือ Salt 1/4 ช้อนชา Tsp

C : Syrup
(1) เหล้ารัม Rum 60ml + น้ำส้มเข้มข้น Concentrated orange juice 15ml (ใช้น้ำผึ้งหรือน้ำเชื่อเมเปิ้ลแทนน้ำส้มได้ Can Use honey or maple juice 15ml)
????ผสมกันแล้วทาหน้าเค้กหลังอบ ก่อนที่จะแรปเก็บ และถ้าเก็บเค้กนานๆก็หมั่นเอาเค้กออกมาทาซ้ำได้เค้กจะหอมฉ่ำอร่อยขึ้น

(2) กลาเซ่พีคอต Glace picot
????ใช้ทาหน้าเค้กหลังบ่มแล้ว และใช้เคลือผลไม้ให้เงา

D : Topping
- ส้มเชื่อม , กีวี่อบแห้ง , อินผาลัม ,แอปริคอต , เชอรี่ บลูเบอรี่ อบแห้ง , ลูกเกด ,เขอรี่เชื่อม , สัปปะรดอบแห้ง , ลูกฟิกหรือมะเดื่ออบแห้ง ,เม็ดทะม่วงหิมพานต์ , อัลมอนด์ พีแคน หรืออื่นๆตามชอบนะคะ
- orange, kiwi, date palm, apricot, dried blueberries, raisins, dried pineapple, dried figs, almonds, pecans.


???????? ผลไม้แห้งอย่างที่บอกอยากให้เค้กอร่อยต้องเลือกดีๆ พิมพ์ขอแนะนำผลไม้ที่เหมาะกับนำมาหมักใส่เนื้อเค้กนะคะ เพราะบางชนิดไม่เหมาะกับนำมาใส่เนื้อแต่แต่งหน้าได้

- อินทผาลัม : เอาเม็ดออก แล้วหั่นให้ชิ้นเล็กลง ตามขนาดที่ชอบไม่เล็กไม่ใหญ่ไป
- แอพิคอต : หั่นให้เล็กลง
- เชอรี่อบแห้ง
-สตรอเบอรี่อบห้อง
- บลูเบอรี่อบแห้ง
-แคนเบอรีอบแห้ง
- ลูกเกด : ขาดไม่ได้ต้องใส่
- มะเดื่อ
- เปลือกส้มเชื่อม
-เปลือกมะนาวเชื่อม
-กล้วยตาก กล้วยอบก็ใส่ได้นะคะ หั่นชิ้นเล็กๆ จะหนึบๆ
- เชอรรี่ เขียว แดง เชื่อม
- ถั่วต่างๆ ถ้าทำให้คนแก่ฟันไม่ดีก็เลือกเป็นพวกสไลด์หรือชิ้นเล็กๆแทน

*ทั้งหมดคือใส่แล้วอร่อย เนื้อสัมผัสไม่เสีย แต่ไม่ได้หมายถึงว่าจำเป็นต้องใส่ทุกตัวนะคะ ก็เลือกใส่ตามกำลังทรัพย์ที่เรามี ใครทรัพย์เยอะใส่หมดก็ได้ไม่ว่ากัน

????ส่วนผลไม้ที่ไม่เหมาะใส่เรื้อเนื้อแต่แต่งหน้าได้ อย่างเช่น สัปปะรดอบแห้ง มะม่วงอบแห้ง กีวีอบแห้ง มะละกออบแห้ง เป็นต้นค่ะ

????ระยะเวลาการหมักผลไม้ ควรจะให้เวลาสัก 7 วันขึ้นไปเพื่อผลไม้จะได้ซึมซับรัมเข้าไป ผลไม้ก็จะนิ่มและฉ่ำด้วยค่ะ สีเค้กก็จะสวย แต่ถ้าถามว่า หมักน้อยกว่านั้นได้ไหม (1 วัน 2 วัน 3 วัน หรือ... ) ได้แน่นอนค่ะ แต่ความอร่อยความฉ่ำมันก็ต้องลดลง ก็เลือกเอาว่าเราอยากได้อร่อยแค่ไหน

Easy And Moist Holiday Fruit Cake!!

Everyone loves this cake that I prepared during Holidays. Super moist and easy to make kind of fruit cake but without alcohol which is child friendly.

Here's what you'll need:
2 cups of any candied fruits
1/3 cup apple juice (80ml)
1/2 cup butter (110g) room temp
3/4 cup dark brown sugar (150g)
2 large eggs
1 teaspoon vanilla extract (5ml)
2 tablespoons honey (30g)
2 tablespoons oil (30ml)
1 and 1/2 cup plain flour or all purpose flour(190g)
1 tsp baking powder (5g)
1/2 tsp nutmeg (2g)
1/2 tsp cinnamon powder(2g)
1 tsp salt (5g)
1 cup of any dried nuts
2 tsp of lemon zest
1/3 cup apple juice

1 cup raisins
1 cup candied red cherries chopped
1 cup candied green cherries chopped
1 cup candied pineapple chopped
1 cup nuts
1/2 cup butter crisco
3/4 cups sugar
1 egg
1/2 t. vanilla
1/2 t. almond extract
1 1/4 all purpose flour
1 /2 t. baking soda
1/2 t. Salt

350 10 to 12 minutes
can double recipe
chill your dough
