FRUIT CAKE - How to make FRUITCAKE Recipe

FESTIVE HOLIDAY FRUIT CAKE
1 1/2 cups (12 oz.) Sunripe Fruit Cake Mix
1 1/2 cups (12 oz.) Candied Pineapple Wedges
8 oz. Candied Red Cherries
8 oz. Candied Green Cherries
1 cup dried apples, coarsely chopped
1 cup pitted dates, coarsely chopped
1 1/2 - 2 cups dark raisins or currants
1 cup pecans, coarsely chopped
1 cup walnuts, coarsely chopped
1 3/4 cups all-purpose flour
3/4 cups granulated sugar
3/4 cups packed light brown sugar
1/2 cup butter, softened
5 eggs
2 tablespoons dark molasses
1 teaspoon ground cinnamon
1/2 teaspoon baking soda
1/2 cup bourbon or rum
1. In a large bowl add all dried fruits & nuts. Pour bourbon or rum over fruit and nuts. Toss. Let stand 2 to 3 hours, stirring occasionally.
2. Measure remaining ingredients into large mixing bowl. beat at medium speed until blended; beat at high speed 3 minutes, scraping bowl occasionally.
3. Stir fruit mixture into batter.
4. Spread fruitcake batter evenly in a very well greased and floured 12-cup fluted or angel cake pan, or 2 loaf pans. Press mixture firmly into pan(s).
5. Bake in a pre-heated 250 F. degree oven until toothpick inserted in center of cake comes out clean, 3 to 3 1/2 hours.
6. Cool in pan on wire rack 20 minutes; invert onto wire rack and cool completely.
TIPS: Garish with whole cherries, pineapples and nuts. Store in an airtight container or wrap well plastic wrap and the tin foil.

Christmas Cake Recipe - Easy Fruit Cake that's beautifully moist!
An easy Christmas cake that turns out perfect every time. No creaming, beating or soaking of fruit required! Plus tips on storage and feeding your Christmas cake.
Feeding your fruit cake in the weeks leading up to Christmas helps to build and intensify the flavour of the cake, and will ensure it's beautifully moist.
Oven Temp:
Bake in the oven at 150C/300F (fan) for 45 minutes, then 140C/275F (fan) for a further 60-75 minutes - until an inserted skewer comes out clean.
Alcohol-free Christmas Cake:
For a non-alcoholic version, you can replace the alcohol with cold tea, fresh orange or apple juice.
You can then feed the cake with either:
1. Cold tea
2. Fresh orange or apple juice
3. Ginger cordial mixed with water (2 tsp mixed with 2 tbsp water)
4. Rum flavouring mixed with water (⅛ tsp mixed with 2 tbsp water).
If you do this, don’t make the cake any earlier than November, as juice (as opposed to alcohol) could start tasting funny after more than a couple of months.

The easy fruit cake ingredients:
3/4 cup (175g) unsalted butter, chopped
1 packed cup (210g) light brown muscavado sugar
2 + 2/3 cups (400g) mixed dried fruit
1 cup (200g) glacé cherries roughly chopped
1 cup (100g) dried cranberries
Zest and juice of 1 orange
Zest of 1 lemon
1/2 cup (120ml) cherry brandy
1/2 cup (85g) ground almonds (coarsely ground - not the type that is like flour)
3 large eggs lightly whisked
1 + 2/3 cup (200g) plain/all-purpose flour
½ tsp baking powder
1 tsp ground mixed spice
1 tsp ground cinnamon
¼ tsp ground allspice
To feed the Christmas cake:
Cherry brandy (1-2 tbsp per week)

1 pound candied cherries, quartered (red and green)
1 pound candied pineapple, cut into small pieces
8 cups pecans, coarsely chopped
1 ½ cups all-purpose flour
2 sticks unsalted butter, softened
5 large eggs
1 cup sugar
¼ cup bourbon
Notes: It is best to make very small, bite-size cookies. This will give each cookie a crunchy texture.

Betty's Festive Fruitcake Cookies
Betty demonstrates how to make Festive Fruitcake Cookies. These cookies will allow you to have the flavor of fruitcake without the trouble! You will notice that some of the measures below are either tiny or unusual amounts. The original recipe was 4 times as large, so I divided each ingredient by 4, and this made medium-sized cookies for me. If you want the original recipe, just multiply every ingredient by 4.
Festive Fruitcake Cookies
4 ounces candied pineapple, chopped
2 ounces red candied cherries, chopped
2 ounces green candied cherries, chopped
½ cup golden raisins
1 cup chopped pecans
¼ cup flour for dredging
5/8 cup flour for batter
2 tablespoons butter (I used 1 tablespoon butter, which turned out fine, if you want to cut down on fat.)
¼ cup light brown sugar, firmly packed
1 egg, separated
1 teaspoon baking soda
1 tablespoon milk
½ ounce brandy (optional)
¼ teaspoon cinnamon
¼ teaspoon nutmeg
cooking oil spray
In a medium-sized bowl, combine candied pineapple, red candied cherries, green candied cherries, golden raisins, and chopped pecans. Dredge with ¼ cup flour and set aside. Cream butter and brown sugar together. Add egg yolk, beating well. Dissolved baking soda in milk and add to creamed mixture. Add brandy, cinnamon, and nutmeg, and the remaining 5/8 cup flour, mixing well. In a small bowl, beat egg white until stiff, but not dry. Fold beaten egg white into batter. Fold in dredged fruit mixture. Prepare a baking pan by lining it with parchment paper and spraying the paper with cooking oil spray. Drop dough by rounded teaspoonfuls onto parchment paper. (Or, you may use a 1-tablespoon ice cream scoop to scoop dough and form it into a flattened ball and place on the parchment paper. Bake at 325 degrees (F) about 12 minutes. Transfer immediately to cooling racks. When cool, arrange on a nice serving plate. We love these! I hope you will, too! --Betty

Ingredients:
1 cup mixed glazed fruits, chopped
½ cup dried apricots, chopped
½ cup dried cranberries
½ cup dark raisins
½ cup candied orange peel
1 cup walnuts, coarsely chopped
½ cup golden raisins
1 cup pecans
1 cup pitted dates
½ cup green candied cherries
½ cup red candied cherries
¾ cup rhum
1 ½ cup all purpose flour
1 tsp cinnamon
½ tsp allspice
½ tsp nutmeg
½ tsp baking soda
½ tsp salt
½ cup (113g) softened butter, unsalted
1 cup packed brown sugar
3 eggs, medium
⅓ cup molasses
2 tablespoons rhum
*Divide evenly into three 6x3x2.5 loaf pans greased and lined
*Bake in a preheated oven at 165C for 1 hr 30 mins or until toothpick inserted at the center comes out clean (you can opt to bake them using baine marie method for even cooking and prevent the cake from drying out or just bake them longer at lower temperature)
*Cool completely and brush all over with rhum or brandy
*Wrap them individually in aluminum foil and refrigerate. Avoid touching with bare hands to prevent spoilage
*Brush them again with rhum after a week then repeat brushing for four weeks
*To make a chocolate fruit cake, replace 1/2 cup of flour with alkalized unsweetened cocoa powder
