Summer Garden Pasta Salad
SUMMER GARDEN PASTA SALAD
This is my recipe for pasta salad that I make often especially when I'm serving Hawaiian pork. A great alternative to mac salad.
RECIPE:
INGREDIENTS:
1½ cups mayonnaise
½ cup buttermilk
2 Tbsp. lemon juice
1 tbsp. chopped fresh dill weed
1 tsp. salt
1 cup diced celery
3 Roma tomatoes seeded and diced
1 cup sliced snow peas (or sugar snap peas)
½ cup diced red onion
15 oz. can whole kernel corn drained
1 lb. box bow tie pasta cooked according to package directions
INSTRUCTIONS:
In a small bowl whisk the mayonnaise, buttermilk, lemon juice, and dill weed until smooth, set aside.
Drain and rinse the cooked pasta in cold water, and drain again. Add the pasta to a large bowl.
Add the chopped vegetables to the pasta bowl, and pour over the dressing. Stir until the dressing has coated the pasta and vegetables. Refrigerate for at least 2 hours before serving.

Capellini with Tomatoes and Basil

Level: Easy
Yield: 6 servings
Ingredients
Kosher salt
1/2 cup good olive oil, plus extra for the pot
2 tablespoons minced garlic (6 cloves)
4 pints small cherry tomatoes or grape tomoatoes
18 large basil leaves, julienned
2 tablespoons chopped fresh curly parsley
2 teaspoons chopped fresh thyme leaves
1 teaspoon freshly ground black pepper
1/2 teaspoon crushed red pepper flakes
3/4 pound dried capellini or angel hair pasta
1 1/2 cups freshly grated Parmesan cheese
Extra chopped basil and grated Parmesan, for serving
Directions
Bring a large pot of water to a boil and add 2 tablespoons of salt and a splash of oil to the pot.
Meanwhile, heat the 1/2 cup of olive oil in a large (12-inch) saute pan. Add the garlic to the oil and cook over medium heat for 30 seconds. Add the tomatoes, basil, parsley, thyme, 2 teaspoons salt, the pepper, and red pepper flakes. Reduce the heat to medium-low and cook for 5 to 7 minutes, tossing occasionally, until the tomatoes begin to soften but don't break up.
While the tomatoes are cooking, add the capellini to the pot of boiling water and cook for 2 minutes, or according to the directions on the package. Drain the pasta, reserving some of the pasta water.
Place the pasta in a large serving bowl, add the tomatoes and Parmesan and toss well. Add some of the pasta water if the pasta seems too dry. Serve large bowls of pasta with extra basil sprinkled on top and a big bowl of extra Parmesan on the side.

Roasted Tomato Pasta Salad Recipe ~ Noreen's Kitchen
Let's use those roasted tomatoes to make a quick and easy and delicious roasted tomato pasta salad! I cooked 1 pound of tri color veggie rotini, but you can use any short cut pasta you prefer and I quick chilled the pasta after draining by running it under cold water and tossing in some ice cubes to quicken the cooling process.
I added one recipe of roasted tomatoes, and I recommend that they be cooled if you are making a salad but in all honesty, I did not and my salad was warm and delicious. I also tossed in 1 pound of fresh mozzarella pearls along with 1/2 a cup of fresh torn basil and a 1/2 cup of my favorite bottled Italian salad dressing. You can adjust this to your taste and leave out or add in as you desire.
