How To make Garlic, Shrimp, and Vegetable Stir Fry
-JUDI M. PHELPS 1 1/4 c Long-grain white rice
-uncooked 2 tb Dry sherry
2 tb Defatted chicken broth
2 tb Reduced-sodium soy sauce
2 ts Sesame oil
2 lg Cloves garlic
minced
2 dr Hot oil
1/2 lb Snow peas :
stem ends removed
1 Red bell pepper -- seeded and
-cut into cubes 1/4 c Green onion thinly sliced
1 lb Medium shrimp :
uncooked,
-peeled, and deveined 1/4 c -- water
2 ts Cornstarch
2 tb Hoisin sauce*
1/2 ts Fresh lemon juice
*Available in Chinese markets or ethnic section of grocery stores. Cook rice according to package directions. In large nonstick skillet, stir together sherry, broth, soy sauce, sesame oil, garlic, and hot oil. Add snow peas, red pepper, and onion and cook quickly over medium-high heat, stirring, 2 minutes. Add shrimp and simmer, stirring 2-3 minutes longer or until shrimp curls. (Do not overcook shrimp) In cup, stir together water and cornstarch. Add to pan and cook, stirring, 1 or 2 minutes or until sauce thickens. Stir in hoisin sauce and lemon juice. Serve shrimp and vegetables over rice. Shrimp and broccoli in garlic sauce is a classic Cantonese dish. It is super healthy, delicious and It takes about 15 minutes to make.
To marinate the shrimp
14 oz 400 grams of Shrimp
1/4 tsp of salt
1 tsp of paprika (Amazon Link -
1/3 tsp of black pepper
2 tsp of vegetable oil
To make the sauce:
1/2 cup of water
1/2 tsp of sugar
1 tbsp of oyster sauce (Amazon Link -
1 tbsp of soy sauce (Amazon Link -
1/2 tbsp of hoisin sauce (Amazon Link -
1 tsp of dark soy sauce
2 tsp of cornstarch
Others
2-3 tbsp of vegetable oil to stir fry
12 oz 340 grams of broccoli
8 cloves of garlic, diced
1/2 tbsp of ginger
A few red dried chilies (Amazon Link -
2 tbsp of water
Instructions
Use paper towels to dry the shrimp then season it with 1/4 tsp of salt, 1 tsp of paprika, 1/3 tsp of black pepper, and a drizzle of vegetable oil. Mix well and set it aside.
Cut the broccoli into florets. Some people will throw out the stems. Let me share a wonderful way to use the stems. Peel the skin and cut them into quarters. Pickle them just like how you will pickle cucumbers. You will be surprised by how good they taste.
Dice 8 cloves of garlic and 1/2 tbsp of ginger. Optionally, cut open a few dried red chilies to spice up the dish, you can also use chili flake if you want.
Before we turn on the heat, let’s put the sauce together: 1.5 tsp of cornstarch, 1 tbsp of soy sauce, 1 tbsp of oyster sauce, 1/2 tbsp of hoisin sauce, 1/2 tsp of sugar, 1 tsp of dark soy sauce, and 1/2 cup of water. Mix well.
Turn the heat to high and heat your wok until it is smoking hot. Drizzle in a few tbsp of oil and swirl it around to cover the bottom. Toss in the shrimp. The wok is super hot. You only need to stir the shrimp for a couple of minutes and they should turn nice and pink. They are not completely cooked through yet. The inside is still a bit translucent. That is the point you want to take them out. Don’t worry, we will cook them further later.
Make sure you tilt the wok to leave the oil behind. We will use that to stir fry the vegetables. Turn the heat back on medium and throw in the garlic, ginger, the optional red dried chilies, and the broccoli. Toss for a minute or 2. Add a splash of water from the side of the wok. Quickly put on the lid to trap the steam so it cooks the vegetables through. This way, the broccoli is stir-fried then semi-steamed, which tastes so much better than just blanched broccoli.
Pour in the sauce. Introduce the shrimp back into the wok. Toss for a couple of minutes or until the sauce is thickened. And you are done.

13 pieces of medium Shrimp ( season with a pinch of salt and a pinch of black pepper)
Carrots
2 medium-sized Carrots (season with a pinch of salt)
1-2 C Broccoli florets
2 C Sugar snap Peas
Half of medium sized Onions
3 cloves Garlic

Sauce: 4 tbsp Teriyaki Sauce, 1 teaspoon Sriracha, 1 tsp Oyster sauce, 1/4 tsp Sesame Oil and 1/2 tsp Sugar (white or brown)

Ingredients for Chilli Prawns:
(Tsp-Teaspoon; Tbsp-Tablespoon)
- Prawns/Shrimp - 500 gms (250-300 gms. net after shelling & deveining)
1st Marinade:
- Salt- 1/2 tsp
- Turmeric Powder- 1/4 tsp
2nd Marinade/Batter:
- All Purpose Flour- 2 tbsp
- Cornflour- 2.5 tbsp
- Ginger Garlic paste- 1/2 tsp
- Pepper Powder- 3/4 tsp
- Soy Sauce- 1/2 tsp
- Egg, whisked- 1
Tempering:
- Garlic chopped- 3 tsp
- Ginger chopped- 1 tsp
- Whole Dried Red Chillies- 3-4
- Green Chillies sliced- 3
- Spring Onion whites, chopped- 3( 2 tbsp)
Sauces:
- Dark Soy Sauce- 2 tsp
- Red Chilli Sauce- 2 tbsp
- White Vinegar-1 tsp
Other Ingredients:
- Onion petals- 1 small onion (50 gms)
- Green Peppers (Capsicum), cubed - 1 cup
- Red Peppers, cubed- 1 cup
- Spring Onion greens, chopped- 3 (3 tbsp)
- Salt- pinch, for seasoning
- Pepper Powder- pinch, for seasoning
- Oil- 1.5 tbsp and oil for deep frying
- Corn slurry- 2 tsp corn flour mixed in 2 tbsp water
Preparation:
- Clean, shell and devein the prawns, wash and pat dry.
- Marinate with 1/2 tsp salt and a 1/4 tsp of turmeric powder. Set aside for 15 mins.
- Peel and chop the garlic and ginger, slice the green chillies. Take out onion petals or cut into cubes.
- Cut the green and red peppers into cubes.
- Chop the spring onion whites and greens separately and set aside.
- Now add all the ingredients for the batter to the marinated prawns and mix it well to coat the prawns well. Set aside for 5 mins while heating the oil for deep frying the battered prawns.
- Once the oil is medium hot, add the battered prawns one by one in hot oil and fry for around 2-3 mins till golden. Fry in batches if required.
- Strain and keep it on a plate. Repeat for the balance.
Process:
- Take a wok/kadai and heat 1.5 tbsp of oil.
- Add the chopped garlic & ginger and give a stir for 15 secs.
- Now add the whole red chillies & sliced green chillies and give a stir for 15 secs.
- Now add the spring onion whites. Give a stir for 15 secs.
- Add the onion petals, cubed green and red peppers. Add salt and pepper powder to season.
- Mix and sauté on high heat for 1 min.
- Now add the fried prawns, mix and keep sautéing on high heat for another 30 secs.
- Now pour in the sauces and mix it well to coat the fried prawns. Stir fry for 1 min and then add the cornflour slurry. Mix and stir fry on high heat for 1 min till it dries up and coats the fried prawns.
- Add some chopped spring onion greens, mix and serve hot.
