PEPPER STEAK RECIPE - BETTER THAN CHINESE TAKE OUT!

INGREDIENTS:
900g Flank Steak
2 each Red and Green Bell Peppers
1 Onion
SLURRY:
400ml Beef Stock
1/4 Cup Soy Sauce
2 tbsp Rice Wine
1 tsp Sesame Oil
3 tsp Brown Sugar
1 tsp Black Pepper
1/2 tsp Sesame Oil
1 tsp Garlic Powder
1 tsp Ginger Powder
MEAT MARINADE:
2 Stock Cubes (I used Knorr Chicken Cubes)
1/4 Cup Soy Sauce
3 tbsp Corn flour
1 tsbp Minced Garlic
1 tbsp Minced Ginger
1/3 Cup Honey
2 tbsp Vegetable Oil
1/2 tsp Sesame Oil
1 tsp Black Pepper

Not to brag but I think my shaking beef recipe is THE BEST HANDS DOWN!!!
SHAKING BEEF/ BO LUC LAC⤵️
MARINADE
2 lbs beef, cubed
A lot of minced garlic (like 10 cloves)
3 TBSP oyster sauce
2.5 TBSP low sodium soy sauce
1/2 tsp fish sauce
3 TBSP oil of choice- I used vegetable
2.5 TBSP sugar
1 tsp black pepper
ADDITIONAL INGREDIENTS
2 TBSP butter
1. Combine all of your ingredients listed under marinade and marinate at least 10 mins at room temp (or over night for best results)
2. Then on a skillet with some heat, cook/ sear your beef. I cooked mine in batches to get a nice crust on my beef.
3. After everything is seared, add all of your beef back into the skillet and add 2 TBSP of butter.
4. Cook until butter is melted.
5. Serve with rice, veggie of choice & dipping sauce. My dipping sauce is salt, pepper and lime juice.

DOs and DONT’s when cooking Vietnamese shaking beef
- DON’T: over crowd your skillet and cook in batches if you must
- DO: wipe your skillet clean in between each batch
- DO: wait til your skillet is HOTT before adding your beef to cook
- Once you’ve added an even layer of beef, DON’T touch the beef!! Leave her alone to sear!
NOTE: when you over crowd your skillet with beef, temperature decreases. Essentially, you end up steaming your beef, not searing it (so you won’t achieve that nice brown/ crust on your beef)

Bo luc lac which translates to shaking beef is a recipe everyone has tries if they are new to Vietnamese cuisine. It's very easy to make and the ingredients are very accessible. Bo luc lac is pretty much steak and onions with an Asian infused flavor.
You can find this dish at many Vietnamese dishes but you will rarely ever see me ordering this at a restaurant because 1) it's expensive at restaurants and 2) it's SO easy to make that you can make it your self. My recipe is THE BEST recipe out there, I haven't met a single person who did not like my recipe.
When making this dish, I recommend using a fairly good cut of beef like ribeye or filet mignon. I'd stay clear of cuts that aren't marbled. Cut your beef into 1 inch cubes and marinate over night for best results!

Equipment
A wok, skillet, or sauté pan
Ingredients
Stir-fry sauce
3 tablespoons soy sauce, regular or light
1 tablespoon Shaoxing wine sub: Chinese cooking wine, dry sherry, or sake
2 tablespoons oyster sauce
2 teaspoons sugar
1 tablespoon cornstarch
1 tablespoon sesame oil, dark-colored variety
½ cup water
For the stir-fry
1 pound flank steak (see note)
¼ teaspoon baking soda
1 tablespoon cornstarch
1 medium onion sliced into strips
1 medium red bell pepper sliced into strips
3 scallions cut into 2-inch sections
2 teaspoons minced ginger
4 cloves garlic minced
Ground pepper to taste
Neutral-flavored oil for searing and sautéing
Instructions
1. Make the sauce by combining soy sauce, Shaoxing wine, oyster sauce, sugar, cornstarch, sesame oil, and ½ cup of water. Set aside.
2. Slice the meat thinly (about ¼ inch) against the grain or across the muscle fibers.
3. Add 2 tablespoons of stir-fry sauce to the meat and mix them together.
4. Add baking soda and cornstarch. Mix them well, so they are evenly distributed. Velvet the meat for about 15 minutes while you prepare the rest of the ingredients.
5. Set your wok or skillet over high heat. Add a bit of oil to coat the bottom when the pan is almost smoking. Spread the meat in a single layer.
6. Sear for about 2 minutes without touching them. Let the other side brown for another minute. Transfer to a plate.
7. Cook onions and red bell peppers for a minute until slightly blistered. Add scallions and push them to one side. Slightly lower the heat at this point.
8. Add a bit of oil and sauté ginger and garlic for about 30 seconds. Toss them all together.
9. Add meat and sauce to the pan. Let the sauce slightly thicken for about 30 seconds.
10. Add some ground pepper and mix them together. Turn off the heat.
